    I used a milk jug and taped the upper level of the water with electrical tape. I would pour in one gallon then tape and continue with the next. The marks were quite off from the quart marks that the pot came with on my little pot.

    A slight oxidation can cause metallic flavor. The wet cardboard is symptomatic of heavy oxidation. It is more likely that the op's problem is an oxidation problem than a kettle problem.

    I don't think the vessel in which op boils is the issue, otherwise there would be a much more rampant problem of metallic taste. I think the mention of oxygen in op'a post is more right on. You should review your processes and reduce you likelihood of picking up oxygen post fermentation.
