    Sounds like you're doing a lot of things right. I would be surprised if it is oxidation in that amount of time given your regimen....it's pretty solid. I've had accidents or been a bit sloppy (equipment failure mid-process) and introduced oxygen and it didn't come through as hugely noticeable...

    What do you sanitize with? Have you tried different water? How hot is your mash/sparge? Do you have more than 1 thermometer to check (thinking astringency here, and this wouldnt necessarily develop with age anyway)

    I think *most* people who buy bulk only buy their base grain. I know some people buy bulk specialty grain if they tend to use a lot of certain things, but most of us still need to go buy/order specialty grains for each batch.

    My experience has not been different from @Blacksmith1 Pear tends to be more delicate and subtle. You might want to plant more than one variety to get more complex flavors (also good for disease resistance, weather issues, etc)

I'm not proud of it, but I have two LHBS within 30 minutes, and another large one (Maryland Homebrew Supply) 40 minutes away - and still buy my supplies online including bulk grain. Bulk prices...
