    Well, I don't have any experience with bottling, but I can tell you, from what I've been reading, kegging seems so much easier. Plus I love having beer on draft, friends love it too.

    I've had good luck with them, I did the California imperial ale, and black India ale, both were pretty good. I also brewed the imperial blonde and Oktoberfest, those turned out horribly, but both times attributed to my inexperience and/or brewing mishaps.

    I skipped bottling and went straight to kegging, but my guess is you should let them sit a while at room temp and see if they carb up.

    If you're worried about, what about putting a layer of Saran wrap over the opening then putting the top on. You could probably put 1-2 psi in it to fill the headspace. This is completely based on theory however :) ... I have no idea if it'll work :)

    Finished first brew day, but have a few questions

    I usually pitch Nottingham around 75-80 degrees, no problems...you'll want to keep the temperature cooler during fermentation though. I set my freezer to 67 +/- 3, fermentation usually kicks off rapidly and violently.

    If you keg, and you're really worried about it, I imagine you could flush out some of the head space with CO2 before fixing the airlock.

    anyone know of a regular store that sells a hydrometer?

    I believe they sell a type of hydrometer at pet stores...though the range is probably not as wide as a brewing one. Or if you've got one nearby, any kind of science supply store.

    Ok, so I'm trying out my first all grain batch using a converted 70 qt coleman xtreme. I added 3.5 gallons of 165 deg water trying to hit 152. I pre-heated the cooler with boiling water about 10 mins before I doughed in. My temp came in closer to 145...I added about 2 tea kettles of boiling...

    Exciting Brewing Weekend

    I went with pin lock, mostly on the recommendation of my LHBS. The recommendation was based mostly on that the pressure relief valves on the ball lock kegs (pin locks don't have one) tend to go bad and start leaking over time which increases your cost, and potentially costs you a bottle of CO2...
