    I used to just dump the sugar right in without boiling all the time. It's not an issue, although I now boil it in water first.

    No, even lagers bottle age at room temperature.

    Agreed. So if you subbed let's say an S-23 instead of the coopers ale yeast that comes with it and did the necessary steps it could actually be called a lager. But the Cooper's kit's are for simplicity in the first place so that won't be happening, at least not with the kits.

    Congrats! It is still green though, give it the necessary 3 weeks or longer and you will thank yourself.

    Cooper's kits come with ale yeast so the temp does not have to be so cold. That said, it is still too hot and needs to be around 70 or lower. But the damage is done since you have already been through the first week. It will have a lot of cidery and or fruity flavors. On a good note...

    IT checking in! Lots of us on here. My SWMBO doesn't mind me brewing but I make sure I do it when our 20 month old is napping or otherwise being entertained or I get that eye.

    I have found the same thing, my Kolsch is great with K-97! I would highly recommend.

    Thanks Revvy, I have read and watched that video.. It's the part when I poured the corn sugar into the bottling bucket that confused me... I have never had a beer batch do that when I poured the sugar in. Anyways i will RDWHAHB(just not this wheat yet =-)

    I searched for awhile and could not find anything like what my issue is here: I just recently brewed a EDME wheat beer and it sat in the primary for 2 weeks and achieved the proper FG. I then racked it to the bottling bucket and commenced to pour the 3/4 cup of corn sugar in the bucket...

    Great story, I don't ferment in my bottling bucket either... for good reason.
