    Pliny the Middle Child

Matt, my understanding from various sources is that Vinnie of RR actaully "wet" hops his beer. Supposedly he gets a fresh crop and vacuum freezes it so he can wet hop all year. This thread seems to make that point and more. One thing for sure, dry (or wet) hopping is where aroma comes from.

    Homebrew Supply Websites

Is it me, or are there a lot of guys with 2-3 lifetime posts saying, "I've used this place, they are great!". Classic undercover spammer post. Yeah, I won't be visiting your sites.

    Banana Bread Ale

Hey DB, I am really adverse to roasty-toasty flavors. Can one leave out the chocolate and still get good results? Did you ever use actual bananas? I've seen this in grocery stores and always wanted to use it...

    Pliny the Middle Child

I wanted to point something out. After trying several hop-pellet-in-beer experiments (I will spare no efforts for research), I am now quite convinced that Pliny's flavor and aroma is most dominated by...Columbus. I think this is the world's most underrated hop. And if you look at the generally...

    Pliny the Middle Child

What really lowers the veggie/grassiness is crashing the temps, which Vinnie does for at least a week, maybe two. 24 hours in the fridge, and grassiness will go away. Most of it is gone in 6 hours at 35F.

Well you are a very lucky man, and apparently have never met Mr. Aceto bacteria. :o

Chilled ale primary: How much long the yeast take?

Hey there, I've taken to refrigerating my ales in the primary overnight for clarity purposes, and the yeast has always come back fine for carbing purposes. My most current ale, however, needs more time to clear. Going on day 3 at ~35F. I'm wondering how long any of you have fridged...

    Weissbier Orange Honey Hefeweizen

Hey, you don't mention banana-clove notes in this, which is typical with the hefe yeast. Seems like that would interfere with the orange & honey. Wouldn't this be better with an American wheat yeast?

New beer style: India FAIL Ale (IFA)

And you could get rid of horny playmates in a hurry too, but WHY!?!?!? :cross:

    Pliny the Middle Child

Well that's definitely more Stone or Sierra Nevada than Pliny. I was thinking of doing a Bigfoot Ale clone at some point.

    Pliny the Middle Child

Yeah, gotta love Vinnie, arguably the best DIPA on earth, and he has an open-source recipe for it. Interesting about the cold and hot dry hops. But that still doesn't explain how he avoids grassiness. One thing I do believe, is there are 5 or 10 bad IPAs out there for every good one. And...

    Seeking advice on late-hopped IPA

Ha, no, pasteurization just kills bacteria and mold that sits around in extract. Milk is pasteurized around 160F, they say 180F for extract, so yeah, even a minute of boil is enough to kill anything, except superior lifeforms which will take over earth and subjugate/eat us. :D

    Seeking advice on late-hopped IPA

I see no reason to do a full 60 boil, especially if you are doing partial boils, just adds to carmelization, darkness, as you mention. Frankly, the only reason to boil extract is pasteurization and hop utilization. I am an AG brewer now, so I do 60 minute boils regardless of hop sched.

    Seeking advice on late-hopped IPA

To expand on polkbar's post, See this article by one of the most-decorated homebrewers ever: http://www.mrmalty.com/late_hopping.htm I've been doing late and flame-out hopping my last 3 IPAs...

    Seeking advice on late-hopped IPA

I'm a big High Tide fan, and I've tried to replicate it. I think the key is wet hopping, which is hard or impossible if you don't grow your own hops. But there is nothing wrong with an all-late hop schedule, that emphasizes flavor and aroma over mere IBUs. The best IPAs (Pliny, High Tide) are...

    Pliny the Middle Child

But the extracts are acids, only for bittering, per Vinnie. Flavor comes from the oils. Does this make sense with what you are saying? I'm not sure what evil magic Vinnie is doing to dry hop in such amounts without getting gassy notes. I'd sure like to follow him around for a day though, PtY...

    Green shoots?

    Green shoots?

So in sunny SoCal, where it's been in the 70's all week, when should I expect green shoots from my second-year hops? I need to plan for my revised trellis. This weather has me a little afraid my hops will come out of dormancy too early.
