Another Sellout: Anchor Brewing Acquired by Sapporo

Elon Musk didn't start Space X because it was a get rich quick scheme. Maytag didn't buy Anchor to get rich either. What's Sapporo's goal?

BIAB in a 4 gallon kettle

for a long time I used the cheap 16 quart $12 walmart pots for 3 gallon batches (valves cost more than the pots). BUT you can't do full volume BIAB really. Just use the bag as a false bottom. Get a second pot to dunk sparge. When i was doing stove top 3 gallon batches, which is the size I...

Correlation between recirculating and head retention?

well, I'm not stepping into the LODO, "oxygen is the root of all evils", pitfall....and you're wasting time with step mashing. But I suggest googling "foam-positive compounds" Bamforth wrote a whole book on Foam. My understanding is that the biggest contributors are proteins and iso-alpha...

    The Home Made Pizza Thread

As far as yeast, correct me if i'm wrong, but Active Dry Yeast used dry. Instant Dry Yeast is supposed to be proofed in warm water (like we do with brewers dry yeast). I've used both and prefer the later but I haven't found it to be critical.

    Very quick souring

Jolly Pumpkin drugs are aggressive too. That time frame doesn't surprise me. If your building up a culture to keep around, I've found it beneficial to grow up the bottle dregs in the bottle before adding to the culture, to give them a fighting chance vs. the established culture. Read this...

Yep. Serve from the keg. We drank it all Friday and Saturday so I didn't even have to add much co2.

2 weeks Kettle to Keg to Drinking - Anyone ever try this? I did!

just bend the bottom end of the tube up an inch, that way you can always bend it back if you want. That's my everyday fermenter. I do 3 gallon batches and use a 5 gallon corney. zero regrets. This is pool season too. Dump hot to keg, put keg on pool steps, come back in an hour and its...

    Hops Direct

I needed to stock up on the fruity hops. Hops Direct has Citra on sale at $18/lb. They had a bunch of whole leaf pounds for $5/ea too. I loaded up, went through the checkout, to find out the cheapest shipping was $63 for 5 lb of hops!!!! So I went back to YVH and gladly paid the higher Citra...

    Which 3 beers?

Of the big beer styles, RIS is my least favorite, personally. BP might be my fav beer style overall. I'd much, much rather have a barleywine or old ale or baltic porter; big malt, no roast.

2 weeks Kettle to Keg to Drinking - Anyone ever try this? I did!

The last mild that I did, we were drinking it at day 5. Ferment in keg, sounding valve to keep pressure at 10 psi, chill slightly to 50F while I'm at work. Tap it when I vey home and drink at basement temp. We could have done it on day 4 tbh. it's done cooking at day 3.

    high temps = fusals?

Unfortunately most of that won't age out. Fusals are not especially volatile and aren't going anywhere. I was just away last weekend and visited a 4 year old microbrew. I was excited actually. Website had their beer list. Nothing over 5.5%. Mosaic pale ale, dry stout, maple amber ale. I was...
