    Did you taste it? If its not super sweet from unfermentables, go ahead and add some sugar. Use some software to figure out how much sugar to add to get you to, say, 4.5% abv. Missing your OG low and ending up with a high FG is typically a sign of poor conversion, due to too coarse of a crush...

    Well that's good rhen but, based on your experience, it sounds like 64 to 66 in one day is too high then. I didn't have that experience with 64 for a week. Again, don't blame the yeast.

    Another option is to daisy chain the kegs together. Uni tank to keg1 via out post, then in post of keg1 to out post of keg2. Leave poppet of keg2 open. Fill both in one go. Keg1 will fill to bottom of in post. Keg2 will get everything else.

    Excessive phenolics is typically a result of lack of fermentation temperature control. Don't blame the test. I've used MJ a dozen times and never had a problem other than slow starts. I froze the cal lager slurry but havent tried it as a second pitch yet.

    I'd go the new T route, upstream of the cold line, and steal yourself a whole new line. I'm assuming it's all exposed under the tub, thereby ir shouldn't be too hard.

    Does it cool but just doesn't self regulate? If it is like that, you can probably just add on an external controller without having to modify the thing. (Worth a try) Also, as someone who's had two STC1000s die but still has two ITC308s going strong, I'd recommend the itc.
