Old batches of Joe's ancient orange

Dangerous things can grow in mead. But if they do the mead will taste like it has dangerous things in it.

    Caramel Apple Cider

If you have pasteurized your beer already, then you have taken down your main defense against infection. The yeast beat the bacteria because there are so many yeast. Sanitation is not sterilization. On the other hand you asked your question 2 days ago and you have probably already done it by...

    Caramel Apple Cider

With that amount of airlock activity you could wind up over-carbing it or just making bottle bombs. Every week that goes by will help. I haven't tasted yours but I under-carbed mine compared to how I carbonate beer and it tasted great. You could use 1/2 to 1/3 or the usual bottling sugar and...

    Ingesting fresh pitched yeast

Science nazi reporting for duty. Correlation is to show a connection between a two data sets. If you did this a hundred times and got sick 37 times that would be correlation.

    Rasberry melomel.

Nice to hear. I think I will put some effort into getting tea then. When you say 1 cup strong black tea what does that mean really. Are we talking playground bully kind of strong or Hercules + Chuck Norris kind of strong? If you put a little sugar in that tea how would it compare to a normal cup...

    Rasberry melomel.

I plan to completely jack your recipe starting tomorrow. A few questions: Could you be more specific on the nutrient and energizer? Amounts, type, and times? What is the black tea for? and what did you use there? Any idea of the FG?

Lazy magnolia Southern pecan Brown Recipe Critique

So that is 2 3/4 lb of specialty grain in an extract recipe. That's double what I have ever used before. I realize that some of that "specialty" grain is maris otter which is really just base malt. My concern is that I wont be able to steep this effectively in 3 gallons of water. Do you do full...

    Caramel Apple Cider

I brewed this a while back and left some with my girlfriend. She loves it but called me after one glass of it and she was decidedly tipsy. She was very happy because of the alcohol and very unhappy because she has to get up in the morning and I didn't warn her this stuff is very alcoholic...

    Lazy magnolia's southern pecan

@Starman Lazy Magnolia actually makes a version that they age in oak Jack Daniels barrels. It is called Southern Gentleman and it is sublime. The flavors blend perfectly and the bourbon really enhances the pecan notes. The downside is they are rather limited on the availability of Jack Barrels...

How to tell a quality keg?

Thanks for the advice everyone. To summarize what I just read, the structure of a good heavy keg is indestructible, but the inside can get scratches and dings that will make it unusable. A "reconditioned" keg shouldn't have any of these, but if they cut corners with reconditioning, it might.

How to tell a quality keg?

So i've been idly shopping for a keg and just kicking thoughts around. I know I want one. I know its a good investment, but which one. I also know I want to have the potential to hook two kegs to one CO2 cylinder. How do you tell a good quality keg from a poor quality one? Kegs seem like...

Thanks for all the great feedback. Keep it coming. Any idea how they view homebrewing?

    Working for Anheuser-Busch?

So I just got off the phone with a recruiter for Anheuser-Busch. I have a second interview on coming up for a job as a "Group Manager." I would be working on the floor managing one of the processes at a brewery in Columbus, Ohio. Although homebrewers are typically indifferent to Budweiser as...

    Cider in Mississippi

I live in northeast Mississippi and I brew beer. I would like to try a cider just 'cuz. My first big problem is where to get juice. My second problem what recipie to use. I found two apple orchards using google but they are each an hour and a half away. I don't think that is an option but...

Big difference between 1/4" and 3/8" diameter wort chiller?

Warning TECHNICAL POST AHEAD. I have taken courses on the analysis of heat exchangers and can do these calculations in detail. It is hard to simplify it without being so simple that i am not contributing. You are going to see three big differences as your diameter increases. Fairly...

    Ginger beer with alcohol!

I followed Darias's recipe pretty closely. I came out with a beautiful beer. Thanks Darias. I tried to follow his suggestion to "hold the ginger at 160 for 20 minutes to pasteurize." However when I put my ginger in the microwave i didn't watch closely enough and it boiled over. Boiling ginger...

    Green apple flavors

So why did it not taste like this the first time I tasted it when it was even younger? Should i have given it another week in the fermentor before bottling?

    Green apple flavors

I brewed a ginger beer 4 weeks ago. The wort had a nice amber color and it went light on the hops. When i moved it from primary to secondary two weeks ago it had some residual sweet flavors with none of the of sour apple taste that young beer typically has. I moved it to bottles and it had that...

    Favorite Bottle to Recycle?

There is a glass recycling place near my parents house. I live a couple hours away from them but when I am there I go and raid all of the empty bottles I can get my hands on. My first choice on the bottles are Guinness, Sam Adams and Hoegaarden. The Guinness labels can be cut off. The Sam Adams...

    Rhetorical Disfluencies that I Hate

To teach what the other idiots are doing. I'm not gonna claim that there isn't right and wrong in language. Just argue on how right and wrong are defined.
