    Yes, I have heard WLP833 can give off grape esters. Haven't met a German beer I didn't like, now that you mention it, that white grape hint is something I didn't realize until now. It's good!

    For any five gallon batch you want a 6.5 gallon fermenter, at least. Some yeasts need more headspace than others. 30% headspace is a solid number I run with.

    That's an excellent idea. What you could do is build it like a keezer and install a collar so you can have passthroughs for your coolant and power lines.

    If it has been a couple days now, just change out the airlock for a new one and rock on! Those styles of airlocks aren't able to be cleaned well, which is why I use the 3-piece style.

    1.003 would work for me. If you don't have a warm and fuzzy on that number, then get some distilled water, and put it into a clean and well rinsed(with distilled water) vessel so it can recalibrate.
