    Are you referring to the temp probe on the RIMS tube? If you are then does your controller have a calibration function? A way around it would be to initially set your set point 5 degrees under your set point.

    Looks similar to the Austrian Pils that I brewed, however I didn't use any corn. For my hops I used Magnum (60 min boil), Select Spalt (10 min boil), and Saphir (dry hopped). The beer was similar to Stiegl Pils.

    I question if a keezer fan is necessary. The way I look at it is that the beer is drawn from the bottom of the keg (provided a floating dip tube is not used), so if the keezer temps are slightly colder at the bottom would adding a fan make any improvements? If so how?

    The leak may be from the seal between the primary regulator and the tank. I prefer the nylon washer style gasket over the small o-ring style.

    Water stuck in plate chiller - normal?

    When my plate chiller requries a "deep cleaning" I let it soak with BLC (at the recommended concentration) over night and rinse well with warm water. By soaking, I use a syringe to fill the wort side of the plate chiller and let it sit facing up, as opposed to submerging it into a bucket.
