    What are you drinking now?

Now that Octoberfest is upon us I'm all in for sampling local craft breweries offerings. IMHO most, not all but most small craft breweries, be it brewpub or all-around brewery, attempt to make an Octoberfest with adjuncts and specialty malts that simply do not qualify as an Octoberfest beer...

What I did for beer today

Got a starter going for Brewsday Tuesday tomorrow. Brewing a Modelo clone sort of. 6 lbs bohemian Pilsner malt 2 lbs flaked corn 1/2 oz home grown Nugget leaf Hops and 4th generation 34/70 yeast repitch. I know it strays from most clone recipes for Modelo but the Nuggets are a substitute for...

What I did for beer today

Last evening I finally got around to transferring my new Red Ale to a keg that was brewed 11 days earlier. This one is also a recipe that I originally brewed over 30 yrs ago. This beer taste great I do not know why it took me so long to brew it again. The reds I have been brewing are good but...

    Cajun exiled in south Texas

Welcome to the madness we call a hobby. As an old timer who has struggled through years of beginnings, let me make a suggestion to you. Study, study, study the recipes, the ingredients, the processes and very importantly, the equipment necessary to brew quality beer at home. Don't advance by...

What I did for beer today

My red ale kicked last week so I brewed a new batch to replace it Tuesday. It should be ready to transfer to a keg tomorrow so today I cleaned the keg the last red was in so I can put the new one in it.

    What are you drinking now?

An APA. I'm trying to reproduce an APA that I brewed over 30 yrs ago. Each time that I have brewed it over the years I have did something different each time. Plus my equipment is totally different and ingredients aren't exactly the same, but this time I followed my original notes as close as...

What I did for beer today

Checked on my recently brewed pale ale. I force carbonated it two days ago. I expected it to be perfectly carbed and cleared as it has been in the beer cooler for 5 days now. But no it was totally flat. I forgot to swap out the tap that I use to carbonate, which leaks CO2, to a serving tap. So I...

Help! Want more RED in my Irish Red Ale

@Broothru I took home a 3rd place ribbon in a Midwest regional competition with this recipe back in 1995. I still brew it today. I allowed a little brewery in Henepin Il to copy it for their flagship beer. They called theirs Lincoln Red it became quite popular among Chicago's red ale fans for...

Help! Want more RED in my Irish Red Ale

I agree that the caramel you used lends more brown than red. I make a red ale 2 or 3 times each year. I use 8 lbs pale 2 row, 1.25 lbs caramel 20, .75 lb Cara pils and 4 oz of Roasted Barley. For hops I use 1 oz Fuggles 4.1 aa for 60 min and 1 oz Cascade Cones 5 aa for 30 min. I use Chico 1056...

What I did for beer today

Swapped out my Murphy Brown ale that kicked and replaced it with my Railroad Porter brewed two weeks ago. And I adjusted the pressure on a batch of Pale Ale that I brewed Tuesday to maintain 10 psi.

What I did for beer today

Yesterday I transferred the two porters that I made to do a yeast test. Each fermenter had 4 gallons which was half of an eight gallon batch. One fermenter was given US 05 and the other Chico 1056. The test went well with very little differences between the two fermenters sitting side by side...

    Blackberry melomel

Good luck using that much blackberries. Back in January 2020 I made a five gallon batch of a Blackberry Melomel that took 2 years to become drinkable. Blackberries are inheritently tart on their own. But with this batch I used Gallberry Honey which also has a harsh bite to it. Very little water...
