    Freezer Temperature Question

I'm currently fermenting a kolsch in the warm summer months here in CO. It's in my upright freezer that has an analog temperature controller operating the temperature. I thought I remember reading somewhere that you want to put the thermometer into a glass of water inside the freezer and then...

    Done fermenting ahead of time?

"Yes it isz" Thanks for the info guys. I think I'm going to give Palmer's 3rd Ed a try from now on. Unless the beer is a complex one, it'll stay in the primary. I'll have to brew a simple beer that I normally put into a secondary and see if there's a difference by keeping it in primary longer.

    Done fermenting ahead of time?

So sounds like I should leave it in the secondary for a little while. I'll bottle it as scheduled then...not for another 10-11 days.

    Done fermenting ahead of time?

Brewed a vanilla cream ale 10 days ago. It sat in the primary for 7 days. It had the most vigorous fermentation that I've ever seen. It blew off a bunch of crap through the blow off tube in the 1st 3 days. I transferred it to the secondary 3 days ago. I was extremely bored and curious today...

Anybody had attenuation problems with WLP400 Belgian Wit yeast?

I just finished bottling a belgian wit from a WLP400. Same problems. I didn't even get the normal krausen rise and fall. I thought I had a stuck fermentation, so I increased the temp up to about 70 from 66. That seemed to help, but the gravity took its sweet time to drop. WLP400 is a...

Spice, Herb, or Vegetable Beer Vanilla Caramel Cream Ale

I just brewed this last night and it's sitting in the primary right now. I ended up with 5.5 gals after the boil (took a bit much from sparging). The yeasties are going to town! It's insane. I have a blow off tube that's putting out a lot of crap into a big bowl. i'm worried the tube isn't...

    HELP...Fermentation WAAY slow!

Well, I hate it when the owner of the thread never follows up on what he said he was going to. ---pet peeve--- I almost did that on this one. So...rocking the primary fermenter a couple of times to move the yeast around and raising the temp from ~ 65-66 to ~69-70 did the trick. The...

    HELP...Fermentation WAAY slow!

Thanks, I'll let you know if it picks up by tomorrow evening. Current room temp is 70. When I moved it, I purposely rocked it once in order to move the yeasties. So we'll see if that does the trick. So no secondary for wits, huh?

    HELP...Fermentation WAAY slow!

I've looked around on the forum, but got a little impatient. Wondering if anyone has suggestions on how to pick up the fermentation on a Hoegaarden Clone using WLP400? I'm used to a very vigorous fermentation in the first 48-72 hours of primary. Not the case with this one. This is my first...

Finally broke down & joined HBT!

I've been brewing AG beers for over the past year and have always used HBT as a source of information. Just moved to Colorado Springs & bought myself a 2nd 5 gal glass carboy so I can have 2 beers going at the same time. :~) I started brewing when my girlfriend bought me one of those Mr. Beer...
