Mash adjustments for body in lagers

I brew lots of light bodied lagers in summer. As per the above excellent reply, i use an extended low temp rest, rice and a light base malt ( Love BEST heidelberg ). Light enough to disappear fast on humid summers day

    best grain for foam?

I did an experiment with hand washing vs dishwasher. Zero difference on lacing etc. So I stopped hand washing and just use the dishwasher now. The tablet/powder used may make a difference.

The summer heat normally goes this time of year but it’s still hanging around. Mid 30’s tomorrow, at least the humidity isn’t high, thank god! Interesting, I’ll treat it the same and see how it goes.

8 days bottled but i wanted a sneak peek. Clean and on the bitter side. More importantly, its quite clean and i can't pick up anything "kviekish" flavour wise. Nothing at all. Could be US05 or similar. I will do another beer with this at least. I tried Lutra thinking it was clean, but i could...

    best grain for foam?

I use chit malt in my rice lagers. No haze at 3%. If Euro Maltsters like Bestmaltz sell it, its a pretty good bet most of it goes to commercial breweries. They're not making thousands of kilos a year for Bob in Texas. Good enough for them, then i've got no issue using it in my rice lagers. I...

    So who's brewing this weekend?

Low alcohol beer. A mate has been off alcohol while training for a marathon, so im kind of going along with it. Dramatically reducing consumption, but now looking at lower alcohol beers mid week. 84.4% Atlas pale 15.6% BB caramalt Superpride @ 30 mins 65cx60 mins, 72c x 20 mins 1.026 20 IBU...

Bottled today ( friday ) after pitching Sunday. Very clear for so young. Excited to try this, as i didn't really pick up any kind of twang i have with other kviek strains

Chit malt at 3% gives my rice lagers very good lacing. And also the 162f rest helps too Remnds me im out of chit malt. Need to reorder

Feedback on my first saison recipe?

Similar experience, i used only liquid for many years, but in the last few years dry yeast just seems to be much better. Wyeast 3726 for saison, and white labs 029 german ale are my only regular liquid yeast strains. Trying out Opshaug Kviek ( White labs ) at the moment but for lagers, S189 or...

can you use chocolate malt only as the dark grains in a dark beer

I've done British mild inspired ales with just ale malt and choc malt. Very nice.

Feedback on my first saison recipe?

I do saison every year. Champagne bottles with very high carbonation is how i like them. Bone dry and earthy and spicy and bitter. I like them around 4-5%. I like 30% Malted spelt and pils, a 90 minute mash at 62c, a high BU:GU ratio and wyeast 3726. I never have issues with brewing in the same...

3 days 1.007. Fairly bitter, but, i had some mill gap issues when i brewed this, so instead of being 1.037 and 37IBU, i ended up with 1.032 and 37 IBU, so the bitterness is understandable. Will bottle on friday ( 4 days from now ). Cant taste any odd or unusual flavours.

I have a "bucket buddy", basically a robo brew but the control panel is just a temp readout and it has 36W element to keep it at temp.

It got dissolved as i poured the cube on top of it haha. Not ideal, though given how fast its taken off i'm not worried. In future planned brews ill just add extra when brewing hot side. Nah, i took a sample. It was fizzy and going crazy. Ill probably give it 3-4 days of stable FG, let cool to...

Sitting at 1.020 today, not that i care about fast ferment times. I added a flat teaspoon of Yeast Nutrient. Next time ill add it when brewing, not at fermentation
