    Using Carafa 3 or Blackprinz instead of roasted barley in an imperial stout?

    Thats a lot of dark malt in a stout to me, but perhaps you only need one dark malt (roasted or chocolate, blat patent, carafa III etc..) around 8oz to a pound and then use C120. Carafa III is not gonna help and Blackprinz is really just color and little flavor (as stated above). I guess I ponder...

    It could always be worse. A homeless man could of pinched a loaf in your kettle, your grainfather could have pulled a knife on you, and your wife could have even told the minions to HIDE your airlocks for fun. Be glad you got through it and prepare for the next HARDCORE BREW!

    For me, I like my smaller one. I brew more often and experiment more frequently. That is a preference but if you are set on big batches, I say go for it, but at the end of the day I like to play around with stuff.... and sometimes myself. :D

    I'd say I have to agree with the longer fermentation. I mean, just because you CAN do something doesn't mean that you SHOULD. Even cheap commercial largers and low brow ales need at least two weeks to finish fermenting unless you somehow reach that coveted 1.010 in SMASH beer format. The concern...
