How Important is Boiling "top off" Water?

I think this last paragraph is what tells the truth about a lot of the brewing practices. Each one decides how far they want to go to get the beer they like;-)

    Stalled fermentation

It is an Ale. I also think the ice at the bottom is cooling maybe too much and stopping the yeast. I would try something to cool more evenly.

Newbie Query - Did I ruin my beer by stirring it too much right after pitching?

If you stirred too quick in circular motion the yeast can get motion sickness and will start late. :-D. Just joking. You will have no problems from that ;-)

    Cold crash

48hrs minimum or more. Control suck back. You will get very nice clear beer.

How do you know when its done fermenting?

Patience. 3 weeks. Will get better beer.

    Coffee blonde question

This. I use 2oz (5 gal batch) for light touch or 4oz for stronger flavor. But grain matters. I usually use Costco Guatemala dark grain that has strong smell/flavor. I wouldn’t do over 4oz of this type. A lighter one maybe.

Build a washer, or buy? Benefits of each?

I would use the $90 for a new keg. I have 7 kegs and 4 fermenters and don’t find them hard to clean manually. Maybe I’m too frugal.

    Belgian saison ferm temp

Which yeast? Many saison yeasts like 80s-90s.

    How to properly use StarSan?

Same here. 86 brews with no problems. Normally I threw it out when I get a spider in it LOL! Those bad 5 batches probably had some other problem.

    Wyst3724 restart with Wyst3711

I started the 3724 at 75F. It kicked in maybe 6-8hrs and had a 1/2 krausen. Then changed it to 79F after 24hrs. At that point it stalled. I changed it all the way to 90F and nothing happened. I'll let it run for a while. Worst case I won't have it ready/ Bummer.

    Wyst3724 restart with Wyst3711

Thanks. Yes I know it could finish but I have a cousin visiting and wanted this beer to be done so I went to try the 3711 route. I made the mistake of poring the new starter after 24hrs and not at the starter high krausen as some recommend. I see it is bubbling faster now but I was expecting...

    Wyst3724 restart with Wyst3711

Got a Saison that go stuck at 1.030 with Wyst-3724. I did a new starter of Wyst-3711 and poured it in. Should it create a new high krausen again? It started bubbling faster but not like a regular one from start and no krausen.

    Periods of abstinence

Last year I brewed 200 gals and I probably drank half of that. I could drink 3-4 pints daily easily. I gain a LOT of weight :-( This year I’m trying to drink only Thursday to Saturday. So yes I’m trying some abstinence. :-/

Need advice for my first starter.

Here US-05 is near $5 lately. At least to me it is nothing for a 5 gal batch. I wouldn’t dare to ruin that amount of beer and all the effort for not spending another $5-$6 on a yeast pack. If you can do a starter with it even better. Still after 2+yrs here reading all over this is my first time...

Need advice for my first starter.

Bottom line is I never hear of people doing starters with dry yeast. Best case you rehydrate it. US-05 is super easy to use.

    Brewer's Edge Mash and Boil

82 batches on mine by now since Dec 2018. Love this toy. The basic one is so cheap now that sometimes I’m tempted to get a spare one.

    Anvil Brewbucket Cold Crash ideas?

Just drill some more bigger holes in the plastic bottom. It will dry ok. You may be overthinking this.

    Lager not lagery enough

I made three lagers this winter. All were good but I’m glad I’m not the only one that feels they were not lagerly enough. Lots to learn here!

    Grain Brewing Question - Suggestion

If you can’t brew a good extract then maybe your overall process could still improve. Going to all grain just add a lot more variables. I would try some solid easy all grain brews with all measurements specified. But trial and error is ok if you have time to experiment.
