    Got this Pacifico clone with 6.75lbs 2-row, 1lb flake maze and 1lb rice syrup. LHBS forgot to give me the rice syrup :-( Brewing now. I have white confection sugar and white sugar. Can I use that instead? Thanks.

    Suggestions For A Better Immersion Wort Chiller

    My Dudda Diesel plate chiller cools from 210F to 3 deg above water temp in 3 minutes up to 50s water temp. No problems cleaning or sanitazing. I think nothing will be quicker. No matter what it is less than 8min here in Michigan.

    This. I think it is a bargain. I have done 43 brews. All grain takes me about 5hrs but I have a lot to clean. Love this thing. I brew 2-4 beers per month in my basement.

    Noob, Is this a sign that I should re pitch ?

    42 brews. Oxygenate with O2 wand 30-45sec. Pitch yeast (dry, wyeast,, Notinghsm, white labs, etc) and in 15 to 30 hrs I get krausen start. Most times around 20hrs.

    Ale fermentation temps

    Heating is a lot easier and cheaper than cooling. Get an Inkbird and a heat mat and you can ferment at whatever temp you want. About $50 investment.

    I keg since I started brewing. After 40 brews I always try to do 18-21 days minimum. Once I keged at 14 for a Marzen due to a trip and was perfect. But it may not work for all. Patience will produce great beer.

    I agree with this and that excessive sampling is common to new brewers. I used to open my carboys for samples after 7-10 days.     Well, since this is a first to me maybe I'm over reacting. I have my process pretty well define by now so was thrown off by this problem. The wort I think tasted normal and got the proper OG. Will see in 3-4 weeks.

    My crushed gap was a little off and went to adjust it to 0.043. Usually I use 0.048 o my Mash & Boil. When I crushed it the grain looked a little too mush.
