    I just made a porter that had the same problem, I had a pH meter fuzz out on me while adjusting water/mash and long story short I added way more latic acid/gypsum than I needed.     Amarillo Amber Ale

    I think Northern Brewer would be a good one with this recipe; liberty, crystal, mt hood would also be nice. If it were me, i would save amarillo for an amber that was more caramel-ly and malty.

    Agree with others.. what did you use to prime (table sugar, DME, etc) and amount much? Did you get a good mix when adding priming solution? What is the temp where the bottles are conditioning? Also, was the wine-y taste some what of a green apple taste?

    If you want to create level surface on the uneven area, buy a bag of quickrete and make a pad. If you don't wet it too much, you really don't even need to build forms, just need 2x4 or something smooth it.
