    Be patient if you have a friend that owes you favors. He might be able to replace the relay. If you have it plugged into an extension cord you might not be getting enough power.

    Actually, the Williamsbrewing prices are starting to look good the more searching I do. I can probably convince my wife it is a good investment because if the electric goes out I can put it in the basement and heat the whole damned house with it if need be.

    Release the pressure on the keg every so often and just let it sit warm. Being a tad on the sweet side shouldn't make it taste all that bad so I expect you need to age it regardless.

    Personally, a little 6 row would be my preferred choice for amylase. More controlled. If sitting around chewing bark and spitting it into a bottle is something you want to do, then go for it I guess.

    I rack to a bottling bucket after cold crashing. Cold liquid holds gases better than warm ones yet I've had no oxidation problems.

    Reservoir water is a moving target. Anecdotal evidence tells me it is softer in the spring when we get lots of run off. I don't know how often they test but have thought about calling and finding out. I haven't tested pH yet though and found it under 10.8+ but I was gone most of the year...
