    What kind of mash paddle?

    Don't waste money on plastic. I had one, when it got hot it was too flexible. I have a long stainless spoon. I leave it in mash, then rinse between mash and boil and it remains in boil kettle until cleanup. It has never been too hot for me to handle with bare hands. Love the stainless spoon.

    I would also add some length to tubing. I think I would add about 2-3 feet per faucet. The last item is the wrench, not sure if you're getting it, but it's useful. Your co2 will be empty, so you've gotta get that filled, or exchanged for a full tank.

    It's not hard like people have mentioned. But it can kill you if you touch the wrong thing. Call an electrician. Money well spent if you're not 100% comfortable, which it sounds like you aren't.

    +1 for DME. I typically pitch the whole thing into 5 gallons of wort. FWIW, DME is good to have on hand anyway. There was one batch we made that was pretty low. We had DME on hand and brought OG back up to range. Beer was awesome!

    Leak free is ideal. But when you're unsure, turning it off gives you peace of mind. Troubleshoot until you find the leaks, then leave it on.

    Beer explosion

    You're fine. But out the exposed end in some sanitizer so when your beer is done fermenting, no air will get in then. The blowoff is a good method. You should do it always from now on. It took an explosion for me to learn that lesson.

    I'd be incline to ask the welding shop to exchange the tank for a true nitro tank, especially since that's what you paid for. Will this tank be a problem when you go to exchange it for another nitro tank when it's empty?

    I think that depends on how many versions back. If your version has adjustment layer capability I think I would stick with Photoshop. Just my opinion, and I have never used Gimp.

    Keg charger

    You would have to use too many of these cartridges to force carb your beer. You should naturally carbonate your beer with priming sugar first, and then use this system to dispense the beer.
