Belgian Dubbel came out a bit...hazy & sour?

The savings you may get from using months old yeast is in my opinion not worth the risk. Especially for a beer with an expensive grist. For a little alcohol Pilsner, maybe the risk is lessened because of the cost is lower.

Anyone else overwelmed by the amount of hops in IPAs and NEIPAs?

I had a number of outstanding hazies at Modern Times taproom, and at other great breweries. But I have had undrinkable ones too. I think more extreme styles require more skill, which is too often lacking these days. Heck, some breweries can’t get simple styles right.

New BIAB Setup... Couple of questions...

I leave my brew hardware false bottom in for the entire process, no issues. I try to leave the thickest trub in the pot, but it doesn’t really bother me if it gets into the fermenter.

How do you interpret competition feedback?

I have never entered beers in competition, I just don’t think that my process is precise enough, or repeatable enough, that I am ready for that. I just like to brew a variety that I like to drink. But, I have read much and heard much about competitions. To me, if you really want to dial in your...

    Wheat extract funk?

If the fermentation was not temperature controlled, I have had this issue with wheat beers. Cool them down, issues gone.

    BIAB Efficiency

My two latest brewing interests are small batches, and low gravity beers. I love the flavor of rye, have heard that it adds lots of body, and is great in low alcohol beers. Might be a thought to try in one batch. I use 7 mm grill grates to squeeze my bag, get lots of wort out of it, I have never...

A mother’s worry about alcohol in baked goods?

A child would have to eat eight rolls or bread servings to equal one “standard drink“. If a parent is letting their child binge on that much bread, there are much bigger health issues than the alcohol, in my opinion.
