    3278; too much funk

Hi All, I brewed a pLambic about a year ago using 3278. I let it sit in the fermenter, untouched, all year long. I recently tasted it and found it to have a nice sourness up front, but the vomit/funk to be too strong at the end. Anyone else have this experience? Will letting it sit longer...

    Hop Rocket

Thanks for the feedback. When using as a hop back, you notice a difference in aroma/flavor than from flame out additions?

Considering buying one. Has anyone used one to great success? To great failure? Anywhere in between? Has anyone used one without a pump? Thanks!

When I lived in Frankfurt, this was a thing the locals were doing during Fasching (Carnival). This website makes a mention of it: http://www.beercook.com/articles/schellbockfest.htm

    Wyeast 3711 -- I'm officially impressed

Interesting, thanks. At 81% efficiency, this will finish at 1.020. I would think that would still be plenty of body. But perhaps Ill cut the columbus back to 2ozs. Any other opinions?

    3638, Aventinus, underpitching

Hello All, Im looking to brew an Aventinus clone this weekend. I like the estery taste in Aventinus. I calc my OG to be around 1.074. Mr Malty recommends a 3.43 liter starter for this gravity, however, Wyeast warns against over pitching and recommends "decreasing the pitch rate" to increase...

    Goose Island and AB

We think it will change for several reasons: First, the GI brewmaster is stepping down as part of this deal. This is a huge, huge indicator of things to come. We've read his official, vague statement in which he states that he wishes to pursue "other things" but he could have pursued "other...
