    Tart and Funky Saison

This totally depends on your fermentation. My typical clean fresh saison finishes around 1.002 every time. I usually blend in the mature portion in a ration of .5-1 gallon to 4-5 gallons of fresh beer. I aim for 2.8 to 3.2 vols when I bottle and if there is any more drop I will be where I...

    Tart and Funky Saison

Ooohhh I'd be willing to make a trade! Also I believe Bernice has both HF and JK cultures in it. You make try to use those. I know Tim did say that he tossed HF dregs in his house culture. I want to say he did with JK too.

    Tart and Funky Saison

I've had great success with Jester King and Hill Farmstead dregs for a more hop tolerant LAB. Also I've been using a Biere de Coupage process to great success. I brew a beer and sour it with a mixed culture of dregs and commercial cultures. Sometimes a combination of both. Then I brew my...

    ECY on love2brew.com right now!

I know UPS is supposed to be the "best" option.... But it's going to take 8 days to get to me now. Luckily it's saison and Brett yeast I ordered this time. Last time I did USPS it was to me in 3 days I believe. I know the holiday put some delay on it but I was thinking it would get here...

    Trying to understad Saison/Farmhouse

Oh I love it as well but I've never used that much in 5 gallons. At .5 tsp it was way to much for me. But that shows you how different people's tastes are!

    Trying to understad Saison/Farmhouse

Holy crap you like coriander! But by definition you are definitely brewing saison. Keep it dry and brew with what you have.

I finally got all my stuff up and running after a few struggles. It's been a long time coming. Thanks to Jay for all the help with the whirlpool returns and the dip tubes. I did a wet run of the HLT and pumps the other day. Plan on doing a full we run tonight. Has everyone been passivating...

    Mississippi Roll Call

Definitely all the above. Mac at Brewhaha can hook you up. Not positive on events though. I'm out of that loop. Trying to finish my brewery first.

Ihop2many, your layout of the kettles is completely different than mine. And I mean from Bru Gear. My element port is on the right side of the kettle directly below the return port. I bet it was frustrating to have the dip tube be that close to the element. I don't know why they are...

I'll add I like the kettles, I really do. When the arrived they were just a bit warped and bent. I was able to get it straightened out but the lids still don't fit right. That's probably the biggest negative, the lid. Not heavy duty really and just have to be forced in to fit. If I had to...

    WLP644 -Brett B Trois

It can take a couple days. How big is your starter? I like to start smaller with something like a 1.020 wort then step it up.

I like the kettles. After a long time I'll be able to fire my system up finally. If I had it to do over again I would probably do Stout take or SS Brewing.

    ISO wyeast 3726

Well I have totally different results. I get tons of saison esters with this even at 1.040 starting gravity. I actually find 3711 to be more plain overall. 3726 gives me peppery hay notes with a hint of tartness and great dryness at almost all starting gravities. It's by far my favorite...

I feel your pain. The support is just not there. Kettles are great just no support. Check out http://www.norcalbrewingsolutions.com for the tubes. Jay has hooked me up with dip tubs and more for the kettles. He's got the right idea for them! I'll have a pic up of my finished system...
