    Thanks, I thought about doing that but didn't want to remove the foam trap. In hindsight I had no issue with foam during the boil but dear lord did I have a mess when I went to chill (nonstop foam).

    2 questions for you all: Is anyone using Rice Hulls in there Z brews? For items like sugar and lactose. where are you adding them? Into the Adjuncts (hop cages) or directly in the grain bed? I put it in an empty hop cage last brew.

    Fermenting Under Pressure

    I shoot for 65-70 on everything but lagers but I can say the have creeped up to about 72 here and there without I’ll effects. For lagers I try to be really strict on not going over 66 F. Will let it get up to 69 F toward the very end for diacytal rest. Average lager temp is 63 F

    Carbonation Issues

    O.G. Was 1.053 and F.G. 1.013. Carbonation stone usually only takes 48 hours to carb but after initial 48 hrs it’s been sitting on gas for another 8-9 days. I usually oxygenate, seal it up, and add the spuding valve right after pitching and let that get up to 10-14 psi naturally at temps of 63-69 F and purge it down to 5 psi through out the first day then let it crawl back up and repeat.     I have been doing all of my beers under pressure in a corny (or larger) and have loved the results. For dry hopping I add the hops in a stainless steel mesh container to another sanitized keg, purge the hell out of it, then do a closed transfer in to it. I will serve out of that keg for 2 weeks...
