    Bottling with covid

I'd think if you were to put masks on your bottles and space them 6 feet apart, you should be fine.

    Are hipsters ruining craft beer?

Yes, some macros are OK, but I admittedly have trouble with the ones in clear bottles, which I think High Life is one of them. I may be mistaken though. Cool Zappa quote on your signature btw. I have a postcard from the Föroya Bjór brewery in The Faroe Islands with the same quote. I'm fairly...

    Are hipsters ruining craft beer?

I've done it. I heard of others doing it and then had a business meeting and the clients were growing peppers in the office. I asked about them and walked away with free peppers. I had a Guinness clone in the FV at the time (and more than I would want to drink), so I decided to add peppers to...

    Are hipsters ruining craft beer?

IPA? Do you mean IPA (cloudy) or West Coast IPA (actually clear like a properly made beer)? That's part of the issue. Definitions have changed. I've brewed with the understanding that "hazy is bad and a defect which should be avoided". However, along come Hipsters who appear to be...

    Are hipsters ruining craft beer?

Hi. It's over seven years into the future from when this question was asked. The answer is, "Yes."

    What are you drinking now?

I re-made a Baltic Porter that went tits-up last year due to bottle bombs since I underpitched the yeast. This time, I pitched a buttload of yeast and it turned-out well. Am intending to age most of the bottles for next winter and am tasting one every week for a few weeks to ensure all is OK...

    Troubleshooting: Frozen beer in fermenter

Yes. Assuming the yeast you did pitch didn't get a chance to get going, I'd thaw, re-aerate (shake) and re-pitch the same yeast.

    Ideal ABV for big beers

I brew a few big beers a year and I usually shoot for nothing higher than slightly over 10% ABV. This is more for practical purposes though since I do this to avoid re-seeding for carbonation. I keg carb too, but don't keg beer that strong. The highest I've done was 15.5% and it tasted too...

    What are you drinking now?

HB Blackcurrant IPA. Maris Otter and a bit of Carapils for malt. Hopped with Bramling Cross for 78 IBU. For yeast I used the yeast cake of a Dark Mild made with Wyeast London ESB. 9 days sitting on thawed flash frozen blackcurrants mashed with a potato masher. Tastes tart, bitter, and good...

    What are you drinking now?

Drinking a really nice HB Dark Mild. At bit higher on the ABV side then intended (3.9%) since I found I incorrectly measured the Crystal Malt and used twice what I was intending. It turned-out really well though. I have the unfortunate task of finishing the keg to free up the tap since guests...

    What are you drinking now?

Homebrew Dark American Barleywine. ABV 9.8%. The grist was Maris Otter with a little Special B and Carafa Special 3. US-05 for yeast. Hopped with Apollo to 83 IBU. I made it a couple months ago to age for winter, but wanted to check the carbonation level. Light to medium carbonation and...

    What are you drinking now?

My Stout. Golden Promise Malt, Oats, Mild Malt, Roasted Barley, and Chocolate Malt. Hopped to 35 IBU with Fuggles and EKG. Fermented on top of an S-04 yeast cake from a Dark Mild. ABV 6%.

    Yeast rafts or infection?

This does look infected to me. However, all may not be lost. I've had similar experiences years ago and if it tastes OK and is at FG, I either scrapped it off and bottled, or bottled from beneath. Since you have a glass carboy, the latter would be easiest. If you do this (and don't dump...

Eisbock. Carbonation must be a bitch and a half. Am going to give it a shot in January.

    What are you drinking now?

Just tapped a keg of my Extreme Mild I've had on gas for the past week and a half. The grist was Mild Malt, Crystal High Color, and Chocolate malt. OG 1.034 and FG 1.013. Mashed a bit on the hot side and used S-04 yeast. A lot of taste and 2.8% ABV - I can drink this all day.
