+1 Yeast health should be the most important thing. For any big beer I make I just make a low gravity 5 gal batch and then use some/all of the cake. Bonus - you get 5 gallons of tasty beer instead of dumping a bunch of nasty starter beer.

And fwiw, those side-loaded QDs are less likely to leak when run at higher pressures. At such low pressures that side-loading becomes more of a problem than at higher pressures.

All those Seadog fruit/wheat beers are the same base beer with some extract/flavoring added after fermentation. I generally am not a fruit beer person either but the Blueberry is not bad (never tried the others).

Maybe because Mild is a style that isn't as well known and there aren't many commercial examples on this side of the pond is what makes the scores so variable? Mine is REALLY low on the carbonation and one NHC judge said it was too carbonated but 'OK for competition'.

My Mild did just the opposite. 27 in the HBT comp and 42/second round/third place in cat in NHC. Both NHC judges were not very experienced so I already rebrewed it.

IMO GC89, don't do that. My guess is that your pH reading was inaccurate. When most 2-row is mashed with pure distilled water (no alkalinity) the mash pH is usually in the 5.6-5.8 neighborhood, sometimes higher. To get a mash pH below 5 with just base malt and tap water almost seems...
