Racked into Secondary... Too much airspace?

This is my first brew and I've experienced a different level of paranoia at each stage of the process so I look to the forums to provide some reassurance/guidance... After racking into my secondary does it seem like I have too much airspace in my carboy? I'm scared of oxidation...

    Aseptox - How long????

Thanks for the info, good to know... Do you think I'd have to resanitize the carboy that's been soaking for 3 days? There's no airlock so I'm a little worried something may have crawled in there

    Aseptox - How long????

I had soaked my secondary in some water and Aseptox 2 days ago and was wondering if I can still use the solution today to sanitize my hydrometer for a reading later on tonight... Is it possible that after sitting in a carboy for 2-3 days a sanitizing solution would lose its sanitizing power or...

    Fermenting question

Do you have a hydrometer? Take gravity readings a couple days in a row. If you get the same reading it means most if not all the fermentation is complete.

Montreal's Festivale Mondiale de la Biere

Forgot to mention the best part of the afternoon: Literally watching cobwebs growing at all the Macro exhibits (Heineken, Coors, Rickard's, Sapporo, Grolsh etc...) ZERO people trying their stuff, including their own reps who were tasting all the local stuff from micro-breweries. Craft beer...

Montreal's Festivale Mondiale de la Biere

Man, just got back. After 6 hours and 100$ later I'm good to go for round 2 on Saturday. Really impressed by Rogue's Nut Brown Ale (or something to that effect). Also had a GREAT Belgian but wish I took down the name because everything's a blur right now!

Montreal's Festivale Mondiale de la Biere

I'll definitely try some Rogue I've heard good things... And since us Canadians don't get any DogfishHead I'm going to ransack their exhibit when I get there! Also, Caribou burgers for lunch will probably be a nice pairing ;)

Gravity Readings, first batch... is this normal?

Thanks for the reply man... I sterilized the equipment I used to take a sample (used plastic tube that I dropped the hydrometer in after taking my sample). The picture was taken after I discarded the sample... You say another 2 weeks though? That seems kinda long to be fermenting...I was...

Gravity Readings, first batch... is this normal?

I'll apologize in advance for my paranoia but this is my first 5 Gallon batch and have been taking every step in the process very seriously to ensure my Wheat Beer is a success... The OG reading before I pitched was on Saturday night (06/02) was 1.054. Today's reading (06/06) was 1.015...

    Getting chummy with hops

I'm sure a lot of people have read this book before but if you pick up a copy of Papazian's "Complete Joy of Homebrewing" you'll get a nice Hop Variety Guide along with a plethora of additional and invaluable information. Some consider it their brew bible - especially beginner brewers such as...

Sediment in bottles after 3 days?

Are you always this paranoid when you brew? "Dude, do my bottles smell like bleach?" "Dude, I'm terrified of bottle bombs!" "Dude, what's with all this sediment?!" Can't wait to taste the IPA bud! :mug:

What I did for beer today

I paired it with two dishes it shouldn't have been paired with: Linguini in a cream sauce and then with strawberry shortcake! (Homemade Irish Stout) :mug:

    Lambic Beer

First time I tried Lambic Beer was at the Cantillon Brewery in Brussels... Little known to me at the time but they are considered some of the best in the game when it comes to Lambics. Not sure how long the process takes but if you can pull it off let me in on your secrets!

Montreal's Festivale Mondiale de la Biere

Montreal's Beer Festival kicks off tomorrow and I know I'll be overwhelmed by the choices that I know I'll miss out on some good brews... Here's a list of Breweries that will be represented, any names that stick out as "must haves"...

Canadian and Toronto Members look here

From Montreal here... Recently discovered a GREAT place for anything beer related. Little place called Mout International. Supposedly they supply something like 90% (could be off here) of all the micro-breweries in Quebec. http://www.biereetvin.com/english/english.htm Not sure if they...

    Question... Getting ingredients right...

Ok, well I went ahead and brewed it all. Ended up using the entire 1kg of DME - hopefully it won't take away from the "light and refreshing" taste I was going for. Actually added some lemon zest and black peppercorn (fresh out of oranges and coriander!)... My OG reading was 1.054. I wasn't...
