    Limit to repitching yeast?

It depends upon many factors. The health of the yeast upon pitching, the part of the fermentation process when harvested, the health of the yeast upon harvesting, and how it was harvested. I have washed the same packet of US-05 around six times, I don't think I will bother with counting...

    Corn sugar vs. DME

The only reason to use DME is if you're trying make a an all malt beer. Corn sugar is the LHBS of undercoating.

Can you harvest yeast from Rouge Dead Guy Ale?

I tried and failed. I attempted to harvest from one 12oz bottle of Dead Guy and another bottle of Allagash White, the White took off and Dead Guy essentially spoiled.

    Yeast Nutrient(s) and Fusel Alcohol

I am currently drinking a 11% Imperial Stout brewed last April. Maybe this is unavoidable with a beer this big, but it finishes quite hot. I have read that a lack of nitrogen during fermentation can lead to the development of fusel alcohol. Yeast nutrients such s DAP (Diammonium Phosphate)...

BIAB - sparge or no sparge

I double batch sparge and consistently get 90% efficiency. My lauter tun is a home depot bucket with a colander placed on it. I collect my wort then place the bag back in the kettle. Then I add my sparge water and let that sit for 10 minutes. I did a one gallon pilot batch of an imperial...

    So who's brewing this weekend?

Friday I brewed a Belgian Pale Ale using yeast cultured from a bottle of Allagash White.

    Brooklyn Brew shop kits

Also, 1 gallon in the fermenter does not equal one gallon out of the fermenter. I at most got 8 bottles fully filled, for $15 that is not a good deal. The kit is a good gift to give to someone who may be interested in brewing, or for someone wanting to brew for fun every once in a while...

    Imperial Chocolate Stout US-05 Antenuation

    I repitched from a slurry of US-05.

    Imperial Chocolate Stout US-05 Antenuation

I pitched a healthy amount of slurry that had been rinsed 4 times.

    Taking hydrometer readings from fermenter

I just used a sanitized turkey baster. Homebrew stores also carry wine thiefs, which are used to pull samples. Infection due to airborne spoilers are probably not a huge concern, just make sure any equipment that touches the product is properly sanitized. And it probably wouldn't hurt to work...

    Imperial Chocolate Stout US-05 Antenuation

Thanks for the quick response. My original plan was to primary for 2 weeks then cold crash it for another week. But I worry that there won't be enough healthy yeast still in suspension if I cold crash. So I will probably just let it sit.

    Imperial Chocolate Stout US-05 Antenuation

I just took a hydrometer reading, and am currently drink my sample of an imperial stout, brewed last Saturday, which had an original gravity of 1.110. Today the gravity is 1.030. Beersmith estimated the final gravity of at 1.026. It has been fermenting at around 68 degrees. My question is...

    Choosing a good starter strain

I am still early in the brewing process, but I began reusing yeast on my third brew. To me, it just doesn't make much sense to throw good yeast away, when it takes very little effort to reuse what I have. So far I am on the 4 generation of US-05, starting at generation 0. My beers have had a...

Normal for krausen to form in slurry jar?

I think it's normal, I topped cropped some yeast from an open fermenter which was quite active. After it settled, I decanted a good amount of liquid off and replaced with with sanitized water. I am not sure if this is best practices or not, but I was left with a good amount of white yeast.

    Brooklyn Brew shop kits

My girlfriend bought me the kit for Christmas. She knows that I am DIY kind of guy and I like beer. We have also seen their booth at the Brooklyn Flea. I brewed my first batch (kit) in January. While brewing I immediately saw the limitations of the system. First they say all the equipment...

    Unexpectedly High Original Gravity

Actually, my original reading was 1.090 before I topped it off. I am sure I broke a couple of cardinal rules. I did not end up with my desired volume, so I add some water to the (1 gallon) carboy, shook it up with my sanitized hand on top, then took another reading. The water I added took it...

    Unexpectedly High Original Gravity

Since I am only doing 1 gallon batches, my mash tun is a 6 quart pot, which I lauter the wort using a colander into 12 qt pot for boiling. Then I return the grain back into the mash tun, along with water from my "HLT" for batch sparging.

    Unexpectedly High Original Gravity

Saturday I brewed my fourth batch of AG beer, an APA. Based upon my previous batch which had a efficiency of 69%, I estimated this last batch at 70%. The measured original gravity was 1.070, I expected 1.053. I am only doing one gallon batches. This time I performed a double batch sparge...
