    After mashing my third batch this weekend I thought it appropriate to ask about Maize usage even though its too late. LOL. I just through my maize in with the grain when I mashed. Did I do it right? Or should I hae waited to the boil to insert maize?

    Your forgetting one thing. When you blow into a straw you are applying force pounds to the air in the straw. When you use an airlock you depend on atmospheric pressure, which is much less than the amount of force you can blow into a straw.

    Actually, there are several reasons for no bubbling in the airlock. In my case, I use a 5 gallon bucket to ferment 2.5 gallons, not sure what you use, so I have a lot of headspace between the top of the bucket and the top of the brew. When fermenting your beer is producing CO2 as a byproduct...

    Christmas Brown...critique?

    Another idea to add sweetness is to add brown sugar as a priming sugar. Alot of the saccharides will be left along with a nice soft molasses flavor.

    Sorry to hear that happened. Im not sure about Ohio law but TX requires a "Brewer's Permit" which allows you to brew your own. Then in order to sell you have to have a "Distribution Permit" which allows you to sell. Just in case you want to think about organizing again check into the Brewer's...

    Rip up this logo??

    Try making the state a solid color. Also texas state flag is blue on the left, red on the bottom and white on the top. I would change the star in the background to represent that. I like the star in the "o" better than with out.

    Consumer to Production

    I agree with shorty. I would not recommend plastic with large batches like that. Invest in a large conical and it will make your life much easier. Don't let these guys get you down. Just plan it out carefully.

    Fish, With the proper equipment you can have your wort pitched and ready to ferment within 3 hours. Depending on the type of brew made, a Mich clone would be about 2 weeks from boil to force carb, you are looking at a max of a month. Im sure Rev will shime in his .02 and tell you beer takes time...

    Full mash, but split boils?

    How much mash liqour are you using in the 3 gal rubbermaid? I mash 6 lb with 2.5 gallon in a 20 qt pot and have issues with space. I have done the split boil with no issues. I split the hops up along with the wort. IE if you plan on boiling .5 oz hops at 60 then split it up between the two pots...

    2 gallon cooler versus 5 countertop mashing

    I use a 5 gallon pot, 6lbs grain and 2.5 gallon mash water and it barely fits in the pot. I would say if you are using a 5 gal cooler you could get 3 lbs of grain and probably 4 gallons of hot liquor but Im thinking 2 gallons would be to small for 3 lb grain and any amount of water.

    Is it ok if I let you know tomorrow? I have to work saturday for an undetermined amount of time. A buddy of mine wants to meet up and get some grain so I will probably go when I get a chance. If not then I am going to leave work at about 4 and go back to work.
