    Quick yeast washing question.

Why do you have an airlock/blowoff tube on your starter? You want as much oxygen as possible being disolved in your starter. If the stirplate is running fast enough and the vessel is appropriately large it shouldn't be able krausen out and over should it?

    How cold is it

-22º But windchill rounds off to an even-40º.

    Mash temp ?

Unfortunately no, because gravity is a measure of density caused by dissolved solids in water. On a hydrometer dissolved starch would weigh the same as sugar. That's where the Iodine Test comes in, to tell what's dissolved.

When doing full 5 gallon boil do I steep grains in full amount of water

I thought he was saying it was designed as a 3 gallon batch not boil and he was going to stretch it to 5. Hop usage is based on gravity. I have never heard of AG vs. Extract affecting hop requirement unless you're boiling longer.

    Quantity/OG problems

Learning how your system preforms is a VERY important an often aggravating step. Yes, more wort = less OG. Everything else is a variable based on how your processes and equipment preform. The more your try and rinse/wring out your mash the more likely you are to get tannin extraction...

How to set up a blow-off tube?

This should work. Your blow of tube doesn't need to be very big. It's just to catch the (possibility of) excess krausen/CO2 that would plug up or over flow an airlock causing a sticky mess. After the bubbling slows swap it out for your airlock, or don't it doesn't really matter, the blow of tube...

    Very very embarrassed......

When I first started out my LHBS lady said, "If you're not doing a starter, rehydrating dry yeast is just another step that can cause issues. There's lots of water in wort why bother waking them up 10 minutes earlier and hoping your extra steps sanitation are good and that your rehydrating water...

    6 months in ferm

Agreed! Actually, even if its a little off (not infected) I would say you should still bottle it and see what it becomes after a couple more mores.

When doing full 5 gallon boil do I steep grains in full amount of water

It depends on your final volume. If you are going from 3 gallon recipe to a 6 gallon final volume you will want to double everything, hops included. If you are just boiling 6 gallon anticipating 50% boil off then you should be fine. 2-3 gallons of boil off in 6 gallons seems a little high. I...
