    Mineral Content of Poland Spring?

I know this is an old thread but I was wondering if anyone could speak to whether Beer Smith's or Brewer's Friend are accurate in their estimates of the mineral content for poland spring. I know its available on their website but the data is presented as a range for the various minerals. I'm...

American Amber Ale Caramel Amber Ale

Well I have to say 1 week in the bottle and it's really coming around. It's a touch bitter and I kind of get candied orange peel. Much thanks for the recipe kingbrian. I suspect this will only get better.

American Amber Ale Caramel Amber Ale

Thanks Chuck I was expecting a touch more balance. It could be user error for sure but was looking for some reassurance that it would improve. Thanks again...

American Amber Ale Caramel Amber Ale

So I pulled a sample around 3 weeks. Pretty bitter... hop aroma and caramel aroma is limited... can anyone provide insight to when the beer matures and is at its best? I was gonna bottle and attend a beer exchange in two weeks but am alittle suspect at the moment. I wish it had a little...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

Mashed this at 152. Can't say for sure if that is why there's a sweet finish but it is rock solid. This is going to the nd versus temple in a few weeks and then up to the great Lakes steelhead fishing if it makes it. I may need to consider just a touch of a dryhopping in the future. Smells...

Autumn Seasonal Beer Samhain Pumpkin Ale

I'm sorry the mo is the toasted malt. I didn't toast and went all mo. I had the byo magazine pumpkin additio if you will and noticed most pumpkin clones went mo so I just went with it. Now my home brew store had golden promise so I could have went with it.

Autumn Seasonal Beer Samhain Pumpkin Ale

I believe its golden promise (english version of 2-row if I'm not mistaken) toasted. I used MO as I assumed it would be a better choice than american pale malt given it was toasted.

    Wyeast 3711 French Saison

So gonna take a crack at this yeast again with the hope that I don't get fusels like I did with the strawberry saison. Since I'm now paranoid would it be reasonable to ferment at 65 for the first two days then bump to 67 for two days then 70 for two days and then hold at 72 until complete...

American Pale Ale Three Floyds Zombie Dust Clone

Fyi did this with citra, moteuka, and mosiac. Felt the aroma was all citra but that the moteuka came through as it hung around in the keg. It kind of got spicy over time. I was considering falconers flight and lemon drop in the future.

Autumn Seasonal Beer Samhain Pumpkin Ale

Hmm when I used the smack packs I've gotten pretty good fermentation in 24 hrs. I'm at a loss because at 90 degrees the og would only change by a couple of points like 0.003. Well sir I'd check my hydrometer and if it's accurate go the route you outlined. I have an interesting situation in my...

Autumn Seasonal Beer Samhain Pumpkin Ale

With 11 lbs of grain and molasses, it's got to be higher. I imagine you mashed for an hour... I would calibrate the hydrometer first. What temp did you take your gravity reading i.e. was it super hot? If so you need to adjust your og. Did you pitch dry and what temps are you fermenting at...

Autumn Seasonal Beer Samhain Pumpkin Ale

Did you use molasses? Did you sparge?

Autumn Seasonal Beer Samhain Pumpkin Ale

I'm going 2 vanilla beans in the secondary next week sanitized in some rum. Unfortunately I can't offer past experiences but I'm thinking it can't hurt and in fact a lot of pumpkin recipes use vanilla.

OMG...Aroma of columbus as bittering hop

Agreed I am using it more and more especially in my apa and ipa. Originally used Magnum and have since changed my mind not likely to go back either.

    Pineapple in beer/hot pepper beer

Hey blue, what was your size batch? I'm just wondering if you had enough fruit. Not that this is a rule of thumb per se but 1 lb per gallon is quite common for a lot of fruit beers. Also with a malty beer and lager yeast I might not expect the fruit to shine especially if the beer was at...

Autumn Seasonal Beer Samhain Pumpkin Ale

Stuck sparges.... all day long. 5 lbs of roasted pumpkin gave me a heck of a time. 11 oz of rice Hulls was not nearly enough... just my experience of course.. BTW was at 152 on the button. Actually overshot on the O.G. and boiled off a tad more than I anticipated during the 1 hr boil. A...

    Pineapple in beer/hot pepper beer

To my knowledge fruit can also go in the mash. I mean I'm doing a pumpkin beer and its finding its way in the mash versus the boil or secondary. I did a strawberry saison where I went into the secondary. Some things I learned about that is one how are you going to sanitize the fruit as...
