confused over german HB advice vs american HB techniques

Wow, I love your drive to get an understanding of the brew process. I got into homebrewing as a chance to replicate the great wiezen beers I had enjoyed in Bavaria years ago. And your mention of Augustiner brought back memories of drinking the Weihnachtsbock at the brewery. Good luck on your...

    Home brewing in Japan

The only people I know of getting "arrested" were a couple of Japanese guys a couple of years ago who were brewing up doburoku, farm style sake. They wanted to be arrested to see if they could get the law changed. I haven't heard of anyone getting nipped for beer, although there are stories of...

    Wheat beers missing OG

Recipe please? More info? If you are doing 100 per cent wheat, then yeah, you'll have some problems. Traditional german wheat is about 50/50 so the wheat can borrow enzymes from the malt for conversion.

    When to lager

I usually ramp the d-rest up to a little higher temp, 68-70. If you've done the main fermentation low, a higher temp later won't affect the flavor, IMO. And yes, 1.020 would be high for a lagered beer.

    Sanitizing with spray

One second is asking for trouble. From the web site: After 1 to 2 minutes contact time, drain sanitizing solution equipment thoroughly. Do not rinse. Homebrew use: Thoroughly wash all surfaces with detergent or a compatible cleaner, followed by a potable water rinse before application...

eBIAB Rye IPA scorched for the THIRD time!

It's the step mashing you're doing. I have come across this in my own EBIAB. And even with recirculation, you can run the risk of getting some sunk built up on the element preboil, which there can get burned. What I am in the process of building is a switching set up which puts the 240 element...

I'm sure you can, but why when the price of a 20k bag at Asahi Malting is under 4000 yen?

Bottlw conditioning temp = 86 DEGREES

Yes, too high. You'll condition (get CO2) faster, but beer degrades very quickly at such temps. If you can, keep it under 70.

For small stuff, I always check ebay first. You can usually find stores there that use cheap shipping. Next, I'll check Amazon, their international shipping section. Same reasoning.

    So...much...FOAM!!

Let me guess, first time using a hef yeast? :D It is, as you found out, one of the more vigorous members of the family.

Ball lock gas vs. liquid posts

The sizes are different. If you search, you'll find stories of people who have had to destroy the QR to get it off the post after connecting by mistake. Take Brewerbrad82's advice, get an extra line out connector and put a gas line on it. That's what I do as well. And add a way to keep the beer...

    Home brewing in Japan

Stealing your post, Blue Frog, but this is a good chance to ask: I keep running across comments from homebrewing folks about how hard it is to get stuff from the two online stores here (Sakeland and Advanced Brewing). Although I am a total net noob, I keep thinking maybe a third presence...

    Home brewing in Japan

I just use nylon laundry bags from the 100 yen store. Lots of different sizes you can choose from. One which I made used a SS 15cm cake form (100 yen) and a cheap laundry bag. It works.
