    You can have the snow. Got hit with 14” last week, 3-5” today. I haven’t brewed someone else’s recipe in 10 years. So this is Joe Formanek’d recipe. Four Tsarinas is the recipe. It’s fantastic! I struggled to get one right. I’ll brew this every year.

    I still use a stone without any meter. I open it until I see small bubbles. I do that for 90-120sec. It will usually have a small bit of foam. Most of my beers are higher gravity.     I agree as well with S-189. I also love S23 too. I’ve had no issues running both in the low 60’s, or up to 17-18C. I’ve not gone any warmer than that.

    I too have fought them. I now keep new purchases in a separate container. I check that before splitting and storing. Love your setup, that catcher saved the day!

    My Belgian single ish? I’m not one to be conforming, but damn good. Just built some 3864 for my favorite triple recipe. I love cool weather brewing.
