    made a starter with the usual 1/2 cup light DME and 2 1/4 cup water ( lil more for evaporation) OG was 1.038 aerated and added yeast at 70F and topped it off with a piece of foil. I've been stirring the growlers every 2 hours. sitting at 68F. absolutely nothing going on. any ideas about...

    ok cool ! no oil issues? might affect the head retention a tad huh? I did a pecan brown and the pecan oils kinda screwed my head up. even after wicking the oils over and over in the oven. but I'm sure pecans have slot more oil then hazelnuts. let us know! curious sounds delicious !

    if u use the cocoa nibs, ground em up an just sanitize em in the oven. worked flawless for me. cocoa powder, nibs and chocolate grain!!!! fireeeeee on tha bayou!!!! lol Good Luck bra! oh yeah, how are u incorporating the hazel nuts? curious.     no problem podna! u might have hit a hot spot when u took the sample especially if u say u took it from the bottom of the cooled wort. by "hot" i mean concentrated. I would venture to say u would be around 1.080 +/-. God bless

    I can't guarantee u anything, but when I put 18lbs of ex light DME in my calculator at 10 gallons I get 1.077. and u steeped 1 LB of carapils ( which is questionable because of the ability to convert it's on sugars) there's no way 1 LB could bring it up 10 points steeped or mashed. maybe if u...

    carapils? that has to be mashed with pale malt, though alot argue about how it can be steeped. from I read some cats do steep it an have it no higher than 160's. an prolly will cause some haze if not mashed. though u are doing 10 gallons. anyone correct me if I'm wrong.
