    Greetings from Upstate South Carolina

Hey BrewdogSC. Welcome. I added the SC to my longtime user ID because I lived in Greenville (actually Simpsonville) when I first had internet access. I'm now near Boston, which was a quite a switch moving from SC. One thing I like about brewing here, is the water coming out of the tap is...

    Burner size for 10 gal???

I like the Bajou Classic banjo burners. They have a nice even flame spread that works well. I have a KAB4 - it works well, but I wish I'd bought the KAB6 as it will handle a little bigger pot. Best of Luck!

    Yeast starter for 1.087 og

How big is your starter container? If it's 2L, you can make that work. My suggestion is a two step starter. Make your 2L starter for 48 hours, then cold crash it. Pour off the liquid and add fresh wort to make another 2L starter, which should go for about 48 hours. So, you need to begin...

    BeerSmith and Mr. Beer

Really? Why would you want to replicate Mr. Beer anything? There are a lot of good extract recipes that don't include the term Mr. Beer.

    Loose air lock

My bet is that your fermentation is nearly complete. What was your OG and what is the SG now? If you're at or near target, that will give you an indication of what's going on. Let it sit another week or two and bottle it.

    Basic keezer build questions

I treated mine like an automotive finish. I scuffed the gloss off of the original paint, and used an automotive primer, then an automotive top-coat. I didn't use any glue, just some double-stick weather stripping between the collar and the top of the chest, and then the rubber gasket from the...

    Italian Floor Corker Cleaniness Question

If you're worried about cleanliness use some PBW and a brush and clean it. And you might want to think twice about soaking your corks in any sanitizer - I don't think that's a god idea. Do some more reading before you try it. Best of Luck!

    Corks not mushrooming.

The commercial cork is a different cork. Yours are fine and will retain that shape. There's not enough pressure in a beer to push a cork out of the bottle, so the cork will keep the shape it had on bottling day. My Belgians have never had a change in cork shape. Best of luck!

    Yeast for an american wheat

I like Wyeast 3463 Forbidded Fruit for my wheat beers.

    Hello from Frozen Minnesota

Welcome to the fun of homebrewing! I think you'll find "payday" is the day you drink the first beer you made and you love it! Or maybe it's the first beer from each batch you brew. Or maybe every beer. In any case, welcome and best of luck!

    Brewing Without Running Water

Wow! It sounds like you've go the process down without running water, and chilling two batches in 20 minutes is great. I just put a spigot into my garage so that I could quit connecting a hose 50' away. I'm proud of you for the ingenuity. Best of luck!

How long will a starter last???

Stick it in the fridge and you should be ok. Before you pitch, pour off the excess liquid, leaving just enough to stir up the yeast into a slurry.

    Upgrade

I have to say I'm offended by your circle** term. If you want to go small, go ahead. But stay on the porch. I started with a couple of 5 gallon extract kit batches, and then grew up into all grain pretty quickly. And found that I wanted to brew 10 gallon batches because I had friends...

Capping with the Italian Floor Corker Question

I use my floor corker frequently, especially for the 29mm caps. I also have a handheld wing capper that I use occasionally, too. Most of my beer is kegged, and I often bottle a couple dozen bottles to take with me somewhere. The floor corker is great. I fill the bottles and place the loose...

    Upgrade

If you want to keep SWMBO happy, but bigger pots. She's going to love your all grain beers, and she'll want you to brew 10 gallon batches of her favorite beers. You'll be sticking the equipment you are planning to buy now in the attic, and having to get bigger pots - which will be a waste of...

    I need some advice

I'd taste it now and make a decision. If you have a thief, pull out a sample. If not, sanitize a small glass and dip out a sample. Let your taste buds be your guide. If the oak flavor is what you're looking for, pull the bag of chips. My experience is that oak flavor fades a bit over time...

Capping with the Italian Floor Corker Question

Martinelli's sparkling cider uses small caps, too. I haven't seen any sparking wine in small cap bottles - but maybe I haven't bought any domestic champagne in a while. But it's pretty easy to tell, just compare the tops of the bottles in question up to a 12oz bottle - you'll notice the size...
