    "Undercarbing" is really just properly carbonating a stout, in this case. It's a combination of the pressure of your CO2 going into the keg and the temperature the beer is sitting at at during carbonation. Here's the table I use to determine how much pressure to use when carbonating and serving.

    Etching in glassware and

    It's called nucleation. It's a "rough" surface that causes CO2 bubbles to form as they come out of the beer. These glasses help with head retention as the head is being continually "fed" CO2. Google "nucleated pint glass" for some additional info. It's pretty cool to watch. Best of Luck!
