    Couldn't agree more. So annoying we cannot get Cryo hops or Lupo Max. I just had a delivery from Australia of some Strata and Nectaron but got stung by customs. May try and order with YVH and hope I don't get stung again although postage is insane too.

    I`d only had. a few cans of it and loved it. Cant get it here in the UK so sent off to BeerCo in Australia for some. Definitely pulling some onion and dried garlic from it, hopefully that will mellow a little as its only a day old in the keg

    Strata kegged yesterday. Didn't dry hop after 24 like most do for bio and haze. Waited till I soft crashed and its still totally opaque. Love this yeast. Pulling a flavour from the Strata or the yeast I can't quite put my finger on. Could be a touch onion/weedy

    Damn I'm about to Dry Hop with a 50/50 of strata and Citra.... Got me a tad worried now. I got a heap of `strata and Nectaron from Beerco. Delivery was quick but got absolutely hammered with import tax with customs.

    Well I recalibrated my pH meter and its now down to 2.5. But it's tasting amazing, getting some nice funky aromas popping through and it has that tingly fizzy feeling. I'm wondering if my pH meter was out when I added the lactic to 4.5 Think I may let it ride a few more days before hopping...

    Hi there Thanks for your reply. Its dropped from 1.070 to 1.050 in 24 hrs too. Im getting more of a lactic after taste than a souring. It actually tastes good at the moment so may let it ride. Do you think I should dry hop now to stop any further ph drop?

    Looks like somethings gone wrong. 24 hours after pitching the sour pitch and my yeast it's gone down from 4.5 to 2.6 WTF??? Actually doesn't even taste that sour. Drain pour????
