    Interesting. Keeping fermentation temps high limits the clove character. I thought I read that high temps bring out more phenols. I suppose I'll shoot higher. Maybe 68, then ramp up to the low 70's as fermentation progresses. So is a .5 pitch rate low enough? Or should I go lower? Thanks...

    Most specialty malts do not have any diastatic power, meaning they can not convert starches to sugar on their own. Base malts have it in abundance. So working with what you have there, the majority of your grain bill will need to be pilsner.

    In my experience, Galaxy is really easy to drown out with other hops. Pairing it up with something as potent as Nelson, I would imagine, would amplify that.     Scored some fresh hops - advice?

    They were in a large, ziploc-like bag. They were at roughly room temp for about 30 hours, then immediately placed in the freezer upon returning home. It's kind of a no-brainer that if you don't freeze them, they're no longer "fresh hops". I'm brewing tomorrow, so we'll see how it goes.
