If I remember correctly, Weyermann states that 20% is the max for Melanoidin, so in the absence of any advice to the contrary I'll go with that, as part of the "other" 50% opposite the wheat (in other words, 50% Wheat, 30% Pilsner and 20% Melanoidin)...

    Dan - In my experience, the labels getting wet did not cause the colours to bleed, but of course they do slip off the bottle fairly easily when wet; on the other hand, that's a good thing when it comes time to re-use the bottles.
