Anyone get upset with a streak of bad beer?

Had citra and Blanc hops dry hopping for 3 days, used citra .5 oz as a late (15min) addition and centennial .5 oz about 30 minutes in. No "long boil" hop. My grain profile was 2.5 lbs of Pale Ale malt, .75 lb wheat, .25 C20, and .25 of flaked oats. I think I had about 2 oz of flaked rice as...

Anyone get upset with a streak of bad beer?

I've been trying to nail down the NE IPA for the last 3 months and it's just proving difficult. All ten (small) batches have been really not great. My other regular IPA's have been dynamite, but as soon as I started actually "focusing" on making a NE IPA, they come out both too sweet and too...

Word to the wise on dry hopping length

I'm sure some hops impart more grassy flavors than others. The nose is really fantastic on this beer. But you tip it back...BAM! lots of cud. I will try aging it awhile and see if that grassy character fades!

Word to the wise on dry hopping length

Just cracked my first bottle of Belma and Calypso hopped NEIPA. I've heard Whispers that you can get grassy flavors with dry hopping for extended periods. I forgot about my batch and dry hopped for 15 days. It's pure lawnmower clippings. Undrinkable! So probably keep the DH'ing to a...

    1.138 O.G. Imperial Stout...no activity after 12 hours?

She's bubbling mildly as of 3pm yesterday. Got a rice krispies noise in the bucket. Gently tickling my homebrewer's nerve.

    1.138 O.G. Imperial Stout...no activity after 12 hours?

Pitched two US-05 packets into the fermenter, volume of the batch at pitch is roughly 2 gallons. I figured I'd be seeing some major pressure build up and activity going on, but I got nothing so far. The O.G. WAS 1.154, but I boiled a quart of water and brought it down to 1.138. I was hoping this...

Centennial vs Columbus as bittering hop in IPA

I like to brew NE IPA's and I was curious which one of these hops would lend the cleanest, smoothest, unobtrusive bittering. I usually use Warrior but I'm out of them right now, so I guess I'm also asking what's similar to Warrior. I like to hop burst at the end and use loads of dry hops. I...

Does too much yeast/gunk in the bottle create gushers?

Very strange. I used a brewing calculator for batch priming and used even a touch less for the style/temp/batch size. I can't figure it out.

Does too much yeast/gunk in the bottle create gushers?

I just bottled an IPA 6 days ago and I put one in the fridge last night and cracked one because I just couldn't wait, and to my total surprise rather than under carbonation I got a mild geyser. I noticed there was a lot of sediment in the bottle (~1 inch). I then went ahead and refrigerated the...

How to figure out exact chemistry of your water

I'm just wondering what tool/piece of testing equipment I need so I can dial in exactly the amount of sodium, chloride, sulfate, magnesium, etc. Thanks!

    Vic Secret hops

So I've heard this varietal is like a Galaxy-lite. Granted, Galaxy isn't an end-all-be-all, but it is a phenomenal hop and is somewhat hard to find. Can you just use more Vic Secret hops to get a Galaxy-like profile? Or is it truly a different hop? Thanks!

Are there any bugs/bacteria that are NOT killed by boiling?

All of the ice comes from my fridge ice dispenser. I've been looking at getting a wort chiller... and that sounds like good advice. The sanitized water that I put the yeast into is drawn from the "currently sanitizing" future fermentation bucket containing ioStar . It takes roughly an hour or...

Are there any bugs/bacteria that are NOT killed by boiling?

Guys I may have found the solution actually. This thread reminded me of the vast amount of fruit flies we are getting in our kitchen as of 2 months ago. https://www.homebrewtalk.com/forum/threads/gnats-in-my-beer.652603/ Apparently they carry a chemical that turns alcohol to vinegar which...

Are there any bugs/bacteria that are NOT killed by boiling?

Thanks for the replies. My procedure goes as follows : Measure out water with Pyrex cups to pour into stainless Mainstays (walmart) pot on stove. Bring to strike temp (usually 160). Measure out grain bill (usually 1 lb per quart ratio) while water is coming to temp. Place in strainer bags and...

Are there any bugs/bacteria that are NOT killed by boiling?

Still trying to treat this infection issue. Sanitize with IoStar, all equipment and utensils Got some brand new buckets for fermenting Double checking all of my steps to make sure things are clean and sanitized All adjuncts get dunked in vodka and mixed in with the completed beer My most...

    Strawberries in Secondary

I purchased 2 lbs of fresh picked strawberries and threw them in the freezer before brewing a batch of what I'd likely call a strawberry white stout. It's about 2 gallons. Instead of going with coffee flavors, I have gone on more of a vanilla route, though I may choose to steep some cacao nibs...

    How long does lactose last?

Just asking because I have the opportunity to buy about 40 lbs locally for an outstanding price. Best place/temp to store it? Thanks!

    Auto Siphon Nightmare

Yeah I'm totally freaked my PB&J beer is going to taste like a ream of Hammer Mill. It's not that I can't make it again, it's just the TIME...EFFORT...etc. Ugh. And the fact that I quite possibly ****** up my OWN beer.

    Auto Siphon Nightmare

I'm a very creative person and I'm like 90% right brained. That doesn't work out for me when it comes to technical aspects, even the simplest things. I'm scared to death of graduating to huge tanks (maybe). I can do it though. I take awhile to catch on but once I do then I work like hell to...
