    coffee stout: racking suggestions

I did a coffee stout recently. A sweet espresso stout actually (stout + lactose + espresso). It turned out amazingly well. I definitely recommend cold-brewed coffee as an addition for your coffee flavor. It is really easy. Use coarse ground coffee (ask for french press or coarser grind...

Homebrew shops not supportive of Military

OP is correct. My business regularly ships packages to APO/FPO/DPO addresses, and the rates the USPS charges us are domestic rates. I'm sad to hear that they don't understand that APO is domestic, and not international. I suggest calling and speaking to another sales person, or buying from a...

My first real RDWHAHB moment (aka: wait three weeks at seventy degrees, dummy)

So far my brews have not tasted good/been well carbed/had good head retention/etc. for about 2 months after bottling... then suddenly they become awesome. Of course my apartment isn't 70 degrees either, it's more like 60 - 65 in there. Summer may lead to faster carbing/conditioning beers...

    Man, I love Apfelwein

Don't modify the recipe -the original is the best. It is also very easy. If you want it sweet, add Splenda at bottling time -it is non-fermentable so it will stay sweet. If you want it carbonated, you will still have to force-carb in a keg or add actual sugar for bottle-carbing. This is...

I completely underestimated role of oxygen

Unless there is a research grant in it for me, I am more interested in making and drinking beer than in designing and performing a series of experiments to test this hypothesis. Honestly just smacks of effort.

Check out the new redesigned Tap-A-Draft system

Bleh. I am glad I got one of the older models before they stopped making them -the ability to mix CO2 and N2O cartridges was a nice touch. These are a much simpler design, and with TAD now using 16oz cartridges, it will probably be easy to find cartridges for the coors bottles... I suspect I...

Why I avoid bars in my area

History. Minor differences in ingredients, and several letters in the name :)

When is it OK to pop the top and take a reading?

Your beer is unlikely to be ready this soon, and patience is a big part of home-brewing. BUT...It is OK to take a sample whenever you want, as long as you maintain proper sanitation.

Why I avoid bars in my area

I don't like to think of myself as a beer snob -I was born and raised in the rural midwest, and am quite capable of enjoying a case of PBR... But I have become a bit of a beer geek: I know the difference between a porter and a stout -and I enjoy trying new beers, and talking about beers while...

Transporting brew through Alabama and Miss.

Ahh... the magic words to remember are "I do not consent." when asked if they can take a look in your vehicle. Always. No matter what you may or may not hypothetically be carrying. If an officer has probable cause, they do not need your consent, and would not be asking. The other useful...

Not Good News, Beer and Gastric Cancer :(

One day, something will kill me. Odds are it will be my ex... If not, it could be a truck, falling boxes, salting my food, or drinking beer. Either way, who cares? I'll still be dead. I might as well enjoy life while I can.

    Equipment upgrade!!!!

I'll second (Third? fourth?) the bigger pot idea -its currently at the top of my list. After that you may be looking for a more powerful burner, like the aforementioned turkey fryer..

    Homebrew books on Kindle

I like real books. I read stuff on a screen all day, but I prefer a book in my hand.

For most Ales that is an excellent ambient temperature for fermentation.

    Cleaning smelly buckets

Oxyclean+hot water soak em for a day or two. Rinse well. Sanitize. Enjoy. You may never get all of the smell out, but it won't hurt anything.

    Cleaning vs. Sanitizing

Easy Clean has been sold as a sanitizer for many years. They are not currently considered a sanitizer by the FDA. There is significant debate as to why -some say due to changing requirements, some say due to costs of FDA fees. It's not bad stuff. It works well enough. Star-San is better...
