Confession - I drank 4 day old beer

But now you know what green beer tastes like. Reduce your dex, increase the DME and WAIT LONGER. Learn to pour and leave half an inch in the bottle to keep the yeast cake intact OR decant to a jug then pour from the jug.

    Coopers Kit's...your secrets?

Dry hopping is a method of taking 15-25gms (personal taste) of hops and throwing it into a wort that has almost finished its fermentation(eg day 5) and letting it sit for another week. The aroma and some slight extra flavor is imparted to the beer without much bitterness as you need heat to...

    aluminum brewpot

Could be i'm not across it, like i said when i heard it i dumped my gear and went SS... Same with Teflon, i dumped most of that when i heard that if it was scratched it releases toxins...

    Bottling at 1.020

Not sure that you should move it near a heater ideal brewing temps are usually below 68*f if it is below that then better. HB99 is right in saying if it tastes sweet it's not ready but some brews will stick higher than other for various reasons. It may be that you are not able to drop the FG at...

    aluminum brewpot

There has been a lot of discussion about aluminum and health in the last couple of years, i got rid of all of my aluminum gear like teflon that is also not great.

    beer aging?

Lagering is a common process for making beer in Europe, make the beer and then cellar at 2*c (close to freezing) for months, i guess they warm it up to drink but not to room temp, as far as i am aware only pommies drink warm beer.... ;)

How much do you lose going to secondary?

A gallon is a bit much but half of that would be normal... Yeast multiplies as it makes beer so if your yeast was active it made more yeast. If the yeast is good quality harvest it. Put it in a 2 liter pet bottle, leave in the fridge overnight, pour off the beer on top and bottle the sludge in a...

    Coopers Kit's...your secrets?

Billy IMHO you didn't wait long enough for bottling or drinking, Coopers Canadian Blonde and Cerveza need longer in the bottle to kill the yeasty flavor. Racking will improve the brew slightly as will dry hopping (adding hops after a week) adding finings will help with this (see isinglass or...

    Bottling at 1.020

Look you lost 30points of FG reading, it's not too bad, there is a big list of fermentables there but unfortunately i work in metric. The more fermentables and the heavier they are eg. dex VS DME the higher the SG and therefore the FG. If the hydrometer stays stable for a few days bottle. If...

Only in the bottle for four days...

My advice is to drink one, ignore how it tastes and leave the rest for the time required, you need to understand when beer is green, drink it and you will know what that means.

Quick question on reusing yeast cake

Look the current science is now leaning away from yeast washing. I have harvested about 5 lots of yeast cakes and my method is simple. Buy a 2 liter PET bottle of water, drunk use or throw out the water. Bottle beer, leave some beer over the yeast cake and give the fermenter a good shake until...

    Shelf life of homebrew

Years... A well sealed glass bottle will go for some time, i have heard of 2-3 years, obviously stronger darker brews last longer. PET bottles will last max 18 months as they lose carbonation through the skin.

    Apricot ale with coopers kit

Can't help with the footprint or quantity (never made a fruit beer) but the process for fruit beers is to make a light wort like a Cerveza or Canadian Blonde and ferment for a week then add fruit to the secondary. It's best to first squash the fruit a bit then freeze it to break down the cells...

    Cooper's Kits - feedback requested!

I haven't had that problem with my Coopers fermenter, seals well. In fact of my 3 current fermenters the Coopers is the only one that seals well. Another fermenter that i have does not seal so well and i use Vaseline on the O ring to seal it properly which also helps as a lubricant to unscrew...

    Wet vs Dry Hopping

Wet hopping (i assume you mean boiling) imparts bitterness to a brew, the alpha acids are not released unless the hops are boiled, to do this boil the hops usually for around 20mins and sometimes in a few stages eg 20mins cascade 10 mins amarillo etc... this will add ibu bitterness to the brew...

My Fermenter still smells like beer. Do I need to keep trying to clean it?

Leave it in the sun for a couple of days and it usually passes.

    Advice needed, please help!

Sounds like your yeast didn't go off well. I would be dumping in more yeast pretty fast and perhaps make a starter first or if using dehydrated yeast at least rehydrate it first.
