    I've never used enzymes and mine ferments great. DWRHAHB Just remember to use the enzymes next time to see if you can tell the difference.

    Infected beer

    How long has it been in primary and what's the abv? I would think the alcohol should be killing the infection if it fermented correctly. If you have visible cultures of bacteria, my guess would be you yeast didn't ferment and there is no alcohol in the beer. Just a guess though.

    Should be fine. I wouldn't make it a habit as that extra window of time gives a chance for all the little bugs in your wort to get a jump start on your yeast. But if you sanitized well their cell counts should have been so low even this amount of time is not that big of a deal.

    +1 = 876 Left within reach of my 3 year old. I was in the garden and he came to me with tears in his eyes and said, "Daddy, I broke your beer." Think he thought I would be mad. To be honest I was proud he came to me about it. At his age I would have hid it from my father.

    Fermenter for a mead I just start has a tiny hole near the air lock seal. Sense CO2 is heavier than O2 anyway, shouldn't I be able to leave it as is? Really don't have the money for a new fermenter this week and all my others are full.

    Yeah, it's ruff. First time I ever dreaded the second half of a 22 oz bottle. But I still finished it. Should have gotten a metal.

    I agree, but that fear of conflict will just cause even more conflict. If they would have spoken and resolved their differences it would be over with little stress. All they passive mess caused is pointless drama.

    Yeast will most like not just be on top of the jar. Can't just scrap off. That being said honey in a fruit ale sounds nice. Black cherry ale mightget changed next time around. =)

    If you try and boil honey in the jar it will explode. Your turn the little water in the honey in the jar to water vapor, it will expand and have nowhere to go.     Don't have a recipe, but you could try and make a Braggot. It's like have wine half honey. Also it you pasteurize a couple quarts you could play around with priming with honey? Just ideas to get your juices flowing. Good luck and I hope you have enough free fermenters.
