    It should! Keep in mind that yeast is usually stored in a refrigerator before you pitch it, so now that it's getting back up to the temperature that it like to ferment at, it's getting to work.

    I certainly wouldn't say that glass is more durable. Glass carboys can be really good, especially for long term aging (stouts/sours/etc.), but more and more people are just using Better Bottles and things like that from a safety perspective.

    I haven't noticed too much of a difference between low and mid 60's (62-67ish), but I haven't gone much outside that. Definitely agree that you could just do a starter the night before and pitch the whole thing while it's actively going, if you wanted to go that route.
