    That's really cool, I've heard it has a very nice peachy character to it. I'd really love to hear how your batch turns out. I just brewed an APA this past weekend that uses the Chama variety from Holy Hops. It had a great floral/passionfruit aroma to it. Can't wait to try it!

    Thanks for the insight, guys! I had heard that late season apples tend to have higher sugar content, but I guess I wasn't quite prepared for just how high it might be!

    I think it depends on the type of oak object you are using too: chips will have the fastest effect, followed by oak cubes, staves, then barrels (but even the size of the barrel has a different effect). Also, the amount of toast and previous use will effect the flavor too. So, the best advice...

    I've only had experience oaking beer, but 3 oz for a month is a lot of oak, even for cubes. I did 1.5 oz medium toast hungarian oak in 5 gallons for 5 weeks in a rye strong ale and it was on the high end of tolerable oak, even ~6 months later. I'd recommend tasting a sample every week or so...

    I'm pretty new to the cider game (a few batches under my belt) and this is my first time using fresh, unpasteurized juice. I just wonder if the sugar content is higher because it's so late in the season and cold, similar to how they make eiswein.

    Okay, good to know! I was thinking that if I just used lukewarm water it would be fine, but I didn't know if the cleaners would corrode the bottle caps or something like that.

    Long story short: I'm not going to have time to remove the labels off the empty bottles I'm about to fill. Does anyone know of any problems with removing the labels (soaking in PBW/Oxyclean/etc) *after* capping?

    Ways to keep fermentor warm during winter

    Here's what I did: 1) Got a 10 gallon utility bucket (the kind with handles) 2) Filled with water (keeps temperature stable) 3) Placed carboy in water 4) Got $15 100 Watt fish tank heater off Amazon & placed in water. Result: rock solid temp readings of 66°F.
