    They don't seem to have a tough time multiplying from what I've noticed. The starter is accumulating a lot of yeast. I was told that you want to have the starter at the same OG as the beer.

    Computing in the yeast starter

    I made a yeast starter with a theoretical OG of around 1.09 with a volume of about 1.6 liters. I ended up putting .81lb of light DME into it. I am targeting 1.10 OG or so for my next beer (a Tripel). Should I take into account this starter when I'm doing my calculations for the boil?

    I can't seem to get any FG below 1.015. I generally ferment at the higher range for ales (74F or so).     Oxygen during primary/secondary is GOOD for the beer. More oxygen will help you get a more complete fermentation. That's why you can buy aeration kits to aerate before you put it into the primary.

    Also, don't worry about oxygen at all! Oxygen is good for the beer during primary and secondary fermentation. Yeast needs oxygen for it's metabolic processes.     Up until now, I've previously used corn sugar. On the last brew that I used corn sugar with I managed to get no sediment.

    I carbonated my last brew with some light DME. When I pour one into a glass I notice some yeast sediment on the bottom. I am pretty sure that I did not siphon any of the yeast from the secondary fermenter into the bottles.

    One thing I have noticed is that there is a lot more yeast sediment in the bottom of these beers. Could this be due to carbonating with DME? When I racked it into bottles I made sure to avoid the sediment at the bottom.

    I decided to just bottle it with a 1/4lb of Light DME. The beer came out alright, the body aged a little bit and got better and the hops calmed down. Not perfect, but acceptable.

    I think I'm going to go with bottling using DME. For a 5 gal quantity (what I have in my secondary) how much DME should I use? I've only used corn sugar before. Also, would Amber DME be a bad idea?

    The boil size was initially about 4.5 gallons (my estimate). But a lot boiled off during the boil and at the end I probably had about 3-3.5 gallons. The OG @ 74F was 1.060 read using a hydrometer. I think adjusted to 60F that's about 1.062. I accidentally overfilled my carboy more than I wanted...
