    I didn't end up making any changes to the conditions. Today I pulled the first sample from the primary. Tastes clean and citrusy, with decidedly muted hefe flavors otherwise. I was really shocked by the smell (borderline stench) during fermentation, but now I would say...don't fear the sulfur.

    Can non-converted Igloo cooler work as a mash tun?

    I used an unconverted 10-gallon cooler and 5-gallon paint strainers for a long time. I didn't even bother with the spigot---I'd usually have a buddy over, and we'd just set the grain bag aside and tip the cooler up into the boil kettle (hot side aeration be damned).

    I don't see how stirring could hurt. It might break up some clumps, which would help efficiency. I stir occasionally while recirculating---I just make sure to stop stirring towards the end of the mash, so that the grain bed can reset itself.

    Garden hose water... how bad is it?

    +1 to RV drinking water hose. Someone on these boards also turned me on to RV-style in-line filters: http://www.amazon.com/Culligan-RV-500A-Recreational-Vehicle-Filter/dp/B000VQBYVW/ref=sr_1_1?ie=UTF8&qid=1299804526&sr=8-1. Pretty simple setup, and all parts are purpose-built for drinking water.
