    I'm definitely not right about this, but for some reason I've never been able to see Simcoe as appropriate in a hazy. It's such a quintessential west coast IPA hop, but I guess it's a lot fruitier than it's piney reputation has led me to believe.

    I heard similar stories from others, so I don't think your alone. For whatever reason, I still think Heady is one of the best beers on the planet. I also have a hard time describing it as an NEIPA.

    I tried a 6 month old Heady vs. a pretty fresh one once. The 6 month old one was absolutely fantastic, and the fresh one was slightly better still. I don't know of any other brewery that I'd gladly have a 6 month old IPA from.

    My experiment is usually to see if I can go at least 2 weeks without touching the keg. The last pour of my IPA is pretty much always the best one, and I always wish I was more patient to give it time and not check every day lol.

    why did i get hop burn?

    +1 to give it more time. Pretty much all my hoppy beers have terrible hop burn for the first few weeks in the keg. I don't even bother sampling them until 2 weeks minimum, and its usually another couple of weeks after that when they start to hit their stride. I wouldn't even consider dumping it...

    Kegerator Labels for Beer on Tap

    I bought these magnetic label holders on amazon: https://www.amazon.com/dp/B088NVW9H7?ref=ppx_yo2ov_dt_b_fed_asin_title&th=1 I wanted a bunch of really simple labels I could swap out easily, and this worked perfectly. I keep the ones I'm not using on the side of the keezer.

    Good to know. I'm pretty excited about Anchovy. I've had it in hazies from Brujos (Anchovy/Citra/Mosaic) and Other Half (Citra/Nelson/Anchovy/Motueka) and both were really great.
