    Yeast Washing question

If you don't plan on brewing with the same yeast in the near future, yeast washing might not appeal to you. For some of us, we have "house yeasts" that we frequently use for a range of styles. Washing the yeast saves us money and also ensures healthy, thriving yeast for all our beers. There...

    Tartness in Saisons

This question would really be better placed in the Lambic/Wild forum. I have limited experience in sours, but from what I gather: Barnyardiness comes from Brett. If you want tartness (like what you get from a Berlinerweiss), you want to focus on Lacto/Pedio. As for timing, the tartness can...

    Wlp023

I've had a few experiences with the Burton Ale yeast over the past few months, and overall was more or less nonplussed with it. Initially, I was intrigued by the allure of described apple and pear esters. But I never was quite able to make it work for me. Recently, I made a six gallons of...

in the fermenter for almost 3 weeks

You don't need to worry about oxidation. There would be a thick layer of co2 in there protecting your beer. In this case, "agitation" doesn't mean shaking the carboy vigorously (e.g. when one is trying aerate), it means taking a sanitized spoon and gently swirling the yeast back into suspension...

    APA/IPA final gravitys

I like a drier IPA, so I shoot for pretty good attenuation. Somewhere around 1.012 on avg. For reference: http://www.bjcp.org/2008styles/style14.php

    First time using Treacle

Precisely -- an old ale. I like a bit of those dark fruit / raisiny flavors that one gets from the darker crystals or Special B, and was hoping to get that from the treacle and aging -- thanks for confirming that!

    First time using Treacle

Planning to brew this up next week as a gift for my buddy's recent marriage -- Would be interested to hear feedback or suggestions, etc., particularly relating to the Treacle, as this will be my first time using this ingredient. 16# Maris Otter 10 oz Crystal 60 4 oz Chocolate 8 oz Black...

Inspiration Thead: Post your 2013 Brew Schedule

I tend to brew two ways: with the seasons and with my own whims. There's something great about waking up on a Saturday morning, thinking "I feel like brewing a porter today", and heading to the LHBS for the supplies. That being said, here's what we've got planned so far: January Ordinary...

    Beer Description Terminology

:D Oh, I'm familiar enough with the funk. Just having a bit of fun. But back to the topic, has anyone heard news on the BJCP Vocab project? Seems I heard they were trying to take this on a while back...

    messed up a boil... Help

I don't see any reason why it wouldn't still be good. Cream Ales have a bit more delicate flavors than, say, an IIPA, but a 10 week primary isn't going to ruin your beer. As for the temperature fluctuations, while that is not the best thing for your beer, locking in your temps is the most...

    Bottling Sour Beer

Wasn't sure if I should put this in the packaging area or here; seemed a bit more specialized so I thought you folks might have more insight: I am planning on bottling my first sour beer (an Oud Bruin) in the coming weeks. It has been sitting in the 1.020s for about 6 months now -- a bit...

    End of 2012

Is that tonite? Good thing it's $2 pints at my local! Then again, maybe I'll brew a Mayan Apocalypse Imperial Stout with Piloncillo and... But I digress.

    Falconer's Flight IPA Thoughts?

In that case, you could keep the 0.75 at 60, leave the 20 where it is and add a 15 addition to get another 8 or 9 IBUs. The latter additions should give you a softer bitterness and will boost that C hop flavor as well. Cheers! Let us know how it turns out.

    Falconer's Flight IPA Thoughts?

Seems like you could goose the IBUs a bit with a bit more magnum at 60 (maybe the full ounce?) Otherwise looks good -- That Falconer's will give you a great aroma!
