    Lingering bitter aftertaste

    Issue is probably hops but you may want to verify that your water does not contain chloramines or just use Camden tablets in every water vessel. They are good insurance and very inexpensive. The bitterness will ease with time so you may just want to store this for a few months.

    You certainly would have been much better off if date was recent using 3 smack packs. With that being said, making a simple starter would make a huge difference. Using older yeast and step up starter is also a remedy. Read up on reclaiming yeast and you will have saved enough for the flask...

    Simple Yeast Storage Procedure

    Part of these post suggest that the harvested yeast lose some through generations. If that is true wouldn't a starter cure that? I have been reusing 1098 and 1056 but so far only a couple generations.

    Originally I just let the swirl take care of mixing but then found the occasional variance in carbonation. May not have had anything to do with just swirling but now I try to always do a gent all stir with sanitized plastic paddle.
