    Covered boil and hot break

I've read about not covering because of off flavors. But if I'm doing a bigger volume boil on the stove I've covered my pot with no problems. I just let it go until it looks like it's about to start boiling. Then I cover it and leave it a little off so there's a gap and I can watch it. Once I...

    An AG Hefeweizen. Any input?

Got it in the Carboy now. My first AG brew day in about 5 years went decent. Mashed @ 154* for 60 mins. Had a hard time getting my sparge started but bumped my mash temp up to 158* Totally missed my #'s and had to adjust on the fly. Had a 3.5 gallon boil and ended up with a 2.5 gallons in...

    An AG Hefeweizen. Any input?

Not being happy with my last few extracts I thought I'd hop back in the All grain world. Put together a recipe but didn't order my grains right. Thought I'd post and get any feedback. This is a 3 gallon batch with a 4 gallon boil. 3# - 2 row 1# - white wheat .5#- Flaked wheat .5#-...

    When to add flavouring extract

You can stir it. Just gently tho. I add my priming sugar mix, then the extract and then rack on top of that. The motion from racking will created a little movement and then I use a sanitized spoon and add to that movement. Just a gentle whirlpool type stir will suffice.

    Accidentally Fermented in Bottling Bucket

+1 to everything said. When ever I get to brewing multiple batches I'd use a bottling buckets just for the spigot. Especially if I was doing something that had to go to secondary. I would always justmake certain I cleaned the spigot super good.

    When to add flavouring extract

I've tried both ways. In the secondary and at bottling. I've had better luck and much better taste adding at bottling. Also be careful because the extracts I've used are super strong and too much tends to leave a real bad aftertaste. I've had better luck using half the amount called for. A...

Thanks Morrey. We love it here. We've been here about 4 years and finally getting settled in. So far things are going great and business is booming. And the weather sure beats the northern winters. Thanks for the heads up on the LHBS, I had been looking for the one that was in Conway anytime...

Can't hit FG on my last 4 Miidwest Kits.

Thanks for the reply. I should of went into more detail but didn't want a long drawn out post for my first post. I did the Irish red and didn't hit my #'s so the second batch was the front porch ale. I rehydrated my yeast and still had no luck. The only thing I haven't been able to control...

Can't hit FG on my last 4 Miidwest Kits.

Like my intro post says, I took about a 4 year break from brewing. Now finally I've been able to dust off the ol' equipment and start making bubbles in the airlock again. I had purchased 4 kits from Midwest and replaced equipment that needed it. My problem is every kit I have done I can't...

    New from SC

Hello all. I was brewing for about 5 years. Went from extract and bottles to all grain and kegging. My wife and I had moved out of state and now after about a 4 year hiatus I have dug out my ol' brewing equipment and started do some extract batches. Soon as I figure out how I'm going to...
